One of the biggest pieces of advice I can give to people recording foley is to go over the top with some of the effects you are recording. If you have someone opening a door, for example, don't just "open the door" put some character in the turning of the handle. Or if you are doing footsteps don't just put your foot down, put a little twist in your step to get the character of the surfaces you are walking on. Recording foley this way might seem weird when listed at louder volumes but when it is in the context of a full mix it will cut through easier and can be mixed in quieter.
