it looks to be an EXTREMELY thin layer on a very hot pan, should be plenty to cook and brown it

We don't make chicken lahm b'ajeen. Ever. Only ground meat. And BTW that's the real name. Simply means meat and dough. Lahmacun is turkish, pronounced in english (c=j). Doesn't mean anything as far as I know. Still, I love your recipes and have made quite a few over the years. But I won't be making this one...🙂

Manouch is dough with thyme and oil with sumak, sesame seeds etc... lahm b'ajeen is made with ground meat, tomatoes, garlic etc...

Lahmacun is the Turkish name yes, but the dish is Levantine Arabic. From Arabic ‘meat-in-dough’ (lahma bajin)

Absolutely not! What does acun mean in turkish? Lahm is meat in Arabic, and ajeen is dough, also in Arabic (b = with). Neither words mean anything in turkish. Credit should be given to the Armenians of Aleppo who make the best lahm b'ajeen ever, with a dough as fine as cigarette paper.😉
