@@crazybotches236 he was working at Relæ a restaurant in Copenhagen under Chef Puglisi (if your not to much into restoration he was souschef at Noma), I don't know his position over there but Relæ closed in 2020 after achieving a Michelin star and a place in the top 50 World restaurant. The system refinement stage is the most exhausting period, this will define the restaurant success. *Kevin, spent your time crafting, creating and refining. Hire a post service person/crew to clean the kitchen, take out the garbage and recycling. You're a restaurant owner, no longer an apprentice chef, delegate.

Where I believe both Tina and Kevin are obviously necessary and integral parts of the operation, we’re only seeing it through the lense of these videos and Tina tends to be more vocal about how tired and burnt out she feels. Which makes sense since most of the videos are filmed in her perspective and who would not feel that way with everything they’ve gone through to get to this point. But even with that being said, it’s obvious how much of a dedicated and patient leader Kevin is when interacting with everyone and that’s something extremely valuable and rare to come across. It’s incredibly challenging when you work with your significant other, let alone building, owning, and operating a restaurant. I honestly am so inspired by how far they’ve come and what they’ve been able to accomplish! I wish nothing but the best for them and their AMAZING team, it’s obvious the love and care they’ve all put into this and I hope they’ll all get a moment to relax and breathe asap, knowing when you need balance and taking care of yourself is just as important as grinding and pushing through hard work ❤

Very important to show the good and the bad when it comes to these things and you capture them perfectly. Even small things like changing tables/numbers can throw off the entire flow and a lot of respect for how you show and handle these situations. The conflict at 19:00 is basically culture clash. You got the blunt Danish culture, which is super honest and upfront vs Korean culture which is about saving face. Both got to learn how to navigate communication so that the other person isn't offended.

Yea, as a german it didn't make me flinch either since it's similair here. But from my own experience I immediately knew that it might get interpreted as polite hostility instead here. Best to try to be a bit less upfront, not for her because partners usual understand, but really for the people around them who don't know the cultural difference.

It's interesting how Tina's only comments when she appeared exhausted were, "You knew what was going to happen, your not ready for this, influencers think they can do anything .” However when Kevin is visibly tired in this video the comments claim that he is carrying the entire restaurant, poor guy, and if he leaves the entire thing will fall apart. I just think that people don’t give the same compassion and kindness to Tina as they do Kevin.

Living, working, and having an investment together changes the dynamics of a relationship. It would challenge the strongest of relationships. On top of that, they’ve been working non stop since they’ve bought the property so I’m sure they have not had time to just be a couple without thinking about all the things they need to accomplish.

There was a snippet where along the lines you were telling Kevin not to belittle/scold you. I don’t think Kevin meant to come across that way! I think he meant it as a lesson to the team that if anyone is going to make a big change to an existing process, be sure to communicate it before you execute the change so it doesn’t have unintended negative downstream impact on the rest of the team! He loves you and the team so I’m sure he had positive intentions!

It's also cultural. Danish are very honest and direct. In many other cultures, especially some asian, you're not that direct. So when you tell them upfront and neutral they'll interpret it down a notch. So a danish neutral info-dump is read as polite hostility/scolding in other cultures. I remember a german friend of mine told his NZ girlfriend's mother "the food was good" everytime he visited, and apparently she interpreted it as "the food was only okay" and kept making something else everytime until they figured out the misunderstanding

Hairnet mandatory in the UK as a chef. Also not giving staff a lunch break with ridiculous long hours is illegal in the UK. Not good enough to say you're busy. 45 mins for 14 hour shift is a disgrace. 1 hour lunch and 15 min break is reasonable. I work in Human Resources. He is Danish should know better

Came in earlier this month. Was really impressed with the FOH and Chef Kevin and his team. I really felt at home, especially being a solo diner. Thank you Tina and everyone @ Mija! Can’t wait to see the menu changes in the future!

I’m so glad Kevin made it known to the videographer where the focus was meant to be. It was “Kevin’s” day and no one else was going to take his thunder. 😄 In all seriousness, what you’re doing is extremely hard work. But there is something so rewarding about putting your whole heart, mind, body and soul into a fulfilling a dream. Granted, there needs to be balance. I am so glad you both found each other. Sort of seems like you both were the missing piece in each other’s journey into finding the path you always longed to walk. Congratulations again on this amazing adventure of opening your own place! I see big things in your future! I only hope though, that perhaps it’s not about how big your restaurant could get. Instead, how you can keep the main thing the main thing amidst all the temptation to chase what some will want you to pursue for the 💰. I feel you both are grounded enough to avoid such perils. Only sharing my 2 cents because great success is like power. With great power comes great responsibility. I know you and Kevin will spidey-sense this journey just fine! ☺️👍🏼😊
