If you want to get your crackers super thin and consistent you can always use a pasta maker! It gets the dough super thin and even! After you have the sheets of dough on your cookie sheet you can pre-cut the sizes by running a pizza cutter or another similar tool and make your crackers the shape and size you want. 😊

Those crackers were yummy I don't like cheez-it the crackers reminded me of the cheese crisps those I get very good not salty Lisa is always doing a great job at cooking and baking love it 👍

We use the pasta maker attachment on our Kitchen Aid mixer to work the cracker dough down to a very thin dough. Works great!

Collagen muffins 2 cups einkorn flour * 3/4 cup sugar * 1 teaspoons baking soda * 1/3 cup collagen * 1 teaspoon salt * 1 cup chocolate chips * 1/2 cocoa powder * 2 eggs * 3/4 Greek yogurt * 1/2 cup oil * 1/2 cup milk * 1 teaspoon vanilla

I have been making sourdough cheezits for years, but I just pour starter onto the pan and then put garlic powder on it 🤷 lol. I've always thought starter by itself tastes like cheezits!

I just tossed a whole quart of sourdough discard because I cracked open the jar while trying to knock some starter off a metal iced teaspoon. I briefly thought of keeping it, but I didn't want to take the chance that any got into the jar. That's too much of a risk for me! All of your recipes look good! I don't know how you find the time to do all you do. I homeschooled 6, did the cooking, the bills and taxes, kept after the kids chores, and tried to keep the house somewhat in order. It's like having several full time jobs. You amaze me!

Hey! Since moving to Cyprus i realized why Greek yogurt has such a great consistentcy: if it's cow milk it's always with gelatine. Sheep and Goat yogurt is the original and you don't need any gelatine. Greetings from Cyprus

Oh my goodness, thank you so much for this video. I was just searching your blog a couple days ago trying to find snacks for my kids. I struggle with healthy snacks besides the constant plain fruits, veggies, yogurt etc not that those are bad options just needing variety. But I always end up back in the rut of buying prepackaged processed garbage because they're quick and easy and easy to take on the go. Love this video!

As for antique bowls usually the paint is really high in lead! You could always look into Pyrex or anchor hocking glass mixing bowls! I love the look of antique bowls but the lead isn’t worth it to me

If you have a pasta roller use it for rolling out cracker sheets! I was trying to roll it with a rolling pin but was having trouble because of my bad wrists. I make crackers several times a week now. It makes it so easy.

Thank you for the parchment paper tip. I was able to get these rolled super thin. I substituted olive oil for the butter. They are delicious and not anymore difficult than baking cookies!

Love these ideas! I use my immersion blender to make my yogurt extra extra creamy. You should try it!

After I have strained my homemade yogurt for 24 hrs. I whip the yogurt with a whisk or sometimes my hand mixer. It makes a thick and very smooth yogurt. Of course you don't have to strain your yogurt as long as I do.

I recently have been making a lot of coffee flavoured granola, with hazelnuts and pecans. With the coffee taste my daughter won't eat my granola hahaha for her I've been making pecan pie granola. And a favourite condiment is a spicy mayo based sauce that goes so well with texmex. As I cannot have much gluten now I spread it on an omelet and add ham, avocado and such and roll it up.

Love love your videos, thank you! Reference your crackers, Ruthanne from Homesteading with the Zimmerman’s, has a sourdough version of just sourdough, melted butter, + herbs of choice. It’s more pourable/spreading thin onto sheet pans. There’s NO rolling, which is always my nemesis to get thin dough that fits the pan. It pretty much thins & levels itself!!!! I’ve not tried it “yet” but I will definitely add cheese like you did… maybe sprinkling it on top 😊

So many good ideas, yum! Little tip with the thrive brand collagen peptides… the plain ones are cheaper than the chocolate and vanilla flavors so if you’re adding cocoa anyway it might be worth using plain instead! The chocolate is super convenient though and I’m sure it’s amazing in coffee.

The yogurt cheese is called labneh in the middle east. We eat it with toasted bread or dipping with vegetables. We love to put on it olive oil as well with lots of toasted seeds on top

You could use stainless steel bowls. I love using them with the younger kids because I don't have to worry about them getting broken. I hate cleaning up glass.

Those all look amazing! If you havent tried it, ancient nutrition make a chocolate bone broth protien that makes smoothies and desserts oh so decadent. Plus it adds 20 g of protien/serving instead of the 10 from collagen peptides.

I use a yogurt strainer I got off of Amazon and it makes the yogurt sooo creamy. I smash half a banana to a half cup of yogurt and a splash of vanilla. Or you could use maple syrup. It tastes sooo yummy.

Since you have so much milk, I think making Labneh. I know it from my lebanese husband. It's pretty much a very thick, cream cheesy dip...you add salt and lemon and later some olive oil and you can just dip things in or put it on bread with some tyme...I think you and your family would love it 😊

LISA, If you coat the flower with the butter before you add the other ingredients it'll inhibit some of the gluten production and they'll be able to roll flatter

whip your yourgut in your kitchen aid! that makes it super smooth. I personally drain most of the whey out, and then add some maple syrup and whip it till its smooth..yum!

I make basically that chocolate milk drink weekly, execpt I make it more of a smoothie/meal replacer for me. I use the same ingredients except I add in a scoop of protein powder and 2 spoonfuls of peanut butter. It makes it more filling and creamy :) Oh and I like to add chia seeds to my yogurt to make it a little hicker and more fiber! Great video Lisa, thanks a bunch!

I feel you on cleaning the muffin tins! I recently got a silicone mini muffin pan and it cleans SO EASILY! One quick swish with a scrub brush and all the caked on dough and blueberry juice was gone. Would highly recommend if you ever want to ditch the paper liners and metal muffin tin

I like my silicone mugging pans too! They clean so easy, I never use liners. Only thing with mine, if I put them directly on a cookie sheet (for stability) the bottoms get quite dark. So I put down my silicone cookie sheet liners first, then the silicone muffins tin.

I’ve heard you can use raw milk diluted 50/50 with water as a fertilizer for your garden! That might give you something else to do with your abundance of milk. :)

I wish that I had something to say or show on YT so that I could live this way. I love everything Lisa does and have loved her for years. But I work full time, I’m almost divorced with four kids, and the only way I know to support myself is through working outside the home. I used to be a stay at home mom and made a lot of Lisa’s recipes and sometimes still do when I have the time. There’s nothing like not having to work outside the home. I just wish I had something people wanted to see and hear. That’s why I have never bought her masterclass and done what she’s doing. I can’t think of anything original. But I’ve also had a lot of gut issues lately and will be trying that gut biome stuff she mentioned.

Thank you for sharing. I totally get making foods around dairy when you have milking animals. We have goats and when they are in full production, we do the same thing! I've found that you can make yogurt even better than store bought by straining like you did and then putting it in the blender with a little vanilla extract. It smooths out the lumps and gives you the richest, creamiest yogurt you could imagine. We like ours really thick so I don't prefer to add more milk back in. Also, if you aren't familiar with cajeta, google it and make some for your family! It's traditionally made with goats milk but you could totally make it with cows milk too, (it's sometimes called dulce de leche when made with cows milk.) That's my go to when we're swimming in milk. It's amazing drizzled over the yogurt. It is high in sugar, but we use it as a treat. My children love dipping apple slices into it.

If you use a handheld imersion blender, you can get your homemade greek yogurt SUPER smooth to the point that it tastes (better than) store bought. Key lime juice plus maple syrup/honey/sugar is my favorite for flavoring!
