I find the best mac & cheeses to be roux based. Works perfectly well with vegan butter and oatmilk. Add some mustard powder and nutmeg to enhance the cheesy flavours.

Someone I know stopped being vegan. I have to respect that. Equally, I would be lying if I said it hasn’t upset me. However, in an attempt to understanding this persons reasoning for not remaining vegan, I sniffed (but not drank!) some dairy milk. It’s safe to say that I have every intention of remaining vegan. Thanks for sharing this video, it was so fun to watch! I can’t say it’s nostalgic as I’ve only been vegan for 2+ years but I like how you’ve stated in the title of this video that this is part 1… which suggests a part 2 is on the way - yay!

I used to make this nacho/mac n cheese sauce all the time and every time i would make it, the recipe got longer! The last one iI can remember was the basic recipe you used and in addition: tomato paste, jalapenos and some of the brine, soy sauce, miso paste, mustard, garlic and various spices. I varied the amounts of everything too and at one point I swear i tasted heaven!

If you like Tofurkey you should definitely try Herbivorous Butcher deli meats and cheeses! They are based in Minneapolis where I’m from and they are insanely good. And they ship all of their meats and cheeses nationwide! They are a stereotypical vegan staple in our city. They are so popular they even opened a completely vegan fried chicken restaurant!

For the carrot and potato Mac n cheese... THE BEST way to prepare it is not traditional at all. I LOVE to put some sliced bell peppers and yellow onions in a skillet and char them as well as caramelized the onions a bit. I also use a jalapeño and serrano for spiciness. After that, you blend the charred peppers and onions with the original ingredients and it creates this southwestern style pasta dish (I'm not even going to call it Mac n cheese) that is PACKED with flavor. It makes a GREAT dipping sauce, pasta sauce, and it's creamy (from cashews) so it makes a good soup base. Like if you make a southwestern corn chowder type deal. Just use the sauce, add some corn, black beans, cilantro and anything else southwestern that one may like. It's BOMB af!!!!!!

I think Cliff bars are incredibly stereotypically vegan - every vegan I know used to travel with at least 1 cliff bar in their backpack/purse "just in case". I don't think I actually really liked them that much, but they were available and did stop me from starving so many times I can't complain!

My stereotypical vegan foods are... Tofu scramble or oatmeal for breakfast. Potato lettuce wraps or Mac and cheese for lunch. Fried cauliflower or veggie nachos for dinner. I used to eat all of these things so much. Veggie nachos don't sound too bad right about now. 🤣

This is such a throwback I kind of want to do this. I never actually made the vegetable mac n cheese, I should! I always just do nooch and plant milk and spices. Also i never even had the potato wedge combo but i recognize it lol. You are so spot on w oat now, 5 yea ago almond, 10+ yrs ago soy. Even though I have all in my milk rotation i think like 2012 i was v on the almond milk train. Then 2018-2021 i exclusively got silk or trader joes coconut milk bc my ex fiancée liked it. & was the only plant milk i could get her on. And now I am indeed an oat milk ho. I def go through cycles. You mentioning raw til 4 ahhhh haven’t heard that in so long lmao i did that in highschool for a minute. Love the undercut! Before I cut my hair real real short I had an undercut just like yours 🌈 If you like mushrooms have you tried like lions mane, hen of the woods, oyster, enoki, etc.? Healthfood stores will trick you into thinking they’re expensive but they’re v decently priced, at least at my local Asian grocery store. I got into them from a local grower at a farmers market though. Also making things from scratch more. I need to get into that. I used to make my hummus from scratch too. Other than homemade hummus I like have to get mine from Arab-owned restaurants bc they just. They make it right.

I drank a lot of black coffee going to shitty diners with my friends in the mid 2000s and eating french fries at chain restaurants. A boca burger is another like... old school classic "vegan option." Avocado sushi is another good one.

My favorite part of this entire video had to be when you tasted the cheese sauce and realized just how foul it really is. For looks it’s definitely a 10/10 but there is no amount of nooch that will make that taste right
