Happy St Patrick's Day to you all! in this week's episode we cook up a Irish dish to celebrate, Irish Stew!
The walk into the Pine woodland was beautiful as I had just finished work there's no better feeling of relaxation than this.
Coming upto the camp spot we could see smoke already drifting up and weaving its way through the branches of the Pine's. A smell of chopped wood and coffee hits you as you enter camp.
Simon was already there, he had managed to get down to camp earlier in the afternoon and was fully set up. He had made his Onetigris Rock Fortress homely with the wood stove in full swing and the additional blankets set out around it for the dogs to lie on.
Joining him and his dog Willow is Rick, he's as his faithful dog Billy who is always at his side. Both dogs excited at the prospect of their first cozy night in a hot tent.
Me and Charlie quickly start work on finding a suitable spot to pitch and within minutes had the second Rock Fortress tent erected and had us loading our gear into it and setting up the wood stove.
Time was getting on and we were loosing light fast. Luckly I had brought in a bag of wood and just had to process it.
Holding off setting up the two camping cots we put the finishing touches to the inside of the tent, setting up out chairs and putting decorative lights up to get into the spirit of St Patrick's Day. Cranking up the stove is always fun and no better fun than when it's chucking it down with rain outside. You hear that cracking and popping of the small pieces of wood you lye on top of the existing smouldering pile, a sense of peace and calm just rushes over you.
After cutting up the veg and shovelling all the ingredients into the Dutch Oven we are joined by Mark, a friend of both Rick and Simon.
After cracking open the other cans of Guinness and wishing everyone a happy St Patrick's Day we tuck into the Irish Stew and what a fabulous dish it was too.
Time to get in to our sleeping bags came too fast, we said our good nights to Simon and Rick and zipped up for the night.
Morning broke with a early sunrise as we are now officially in Spring, a bright sunny day seeped in as I unzipped the tent.
Cracking up the stove again we get the kettle on and also round one of the breakfast we had brought with us. Potato Cakes are a big favorite of Charlie's and also a big favorite of the people of Ireland too. Wolfing them down we had over to Simon's tent for a full English which tasted amazing.
After packing up and making sure we left no trace of us being there we said our goodbyes and headed home.
