Ackee and Saltfish is known as Jamaica's national dish, in this cooking programme tutorial from the Caribbean Cooking School DVD Volume 1.
The expert chef will take you through the steps to cook it right.
This Ackee and Saltfish Video Recipe is one of many that can be found on our Jamaica Series DVD, currently available in two volumes.
This dish contains some of the following ingredients.
1 pack of Saltfish (dried, salted codfish)
1 (drained) can of tinned ackees,
1 medium onion,
1/2 tsp black pepper,
3 tbsp of butter OR cooking oil
1/2 Scotch bonnet or hot chilli pepper
2 Sweet peppers different colours.

I’m Nigerian and my husband is Jamaican... he loves Ackee and I’m ok with it. It’s amazing to me how Ackee is not native but came to Jamaica from West Africa... however it isn’t celebrated in West Africa as it is in Jamaica.

I can cook acki and salt fish like a don but ur video was simple and very easy for beginners i enjoy this dish everytime with eaither fried dumplin or coco bread

Cconut oil is the best for flavour and taste and keeping it closer to the tradition. All those staples mentioned are good but the main staple that accompanies ackee is roasted bradfruit.

Start by putting some Hoil hin, hadd Honion, alf of a tomato and hadd the Hakee. I love it, thanks.

I soak the salt fish overnight then boil for 10 minutes, drain add cold water to cool it off drain again and it ready , don't forget to pick out any bone

The Nang jolka Ghost pepper is the strongest pepper. If using ghost, only One half tea spoon or less of the pepper is enough. Any more, you will get hurt. Becarful, and eat good!

CaribbeanCookingTV Ackee is a fruit. Why not use fresh ? tinned foods are preserved . :-( .

Yes Jan Lopez you are correct, but most ackee sold out of Jamaica is in cans/tins. Not fresh or frozen, thank you for asking.

Hi Shelly Thelwell normally saltfish is soaked in water to remove the excess salt, you can do this twice. Then you flake it can it can be cooked in a few minutes with ackee in the frying pan.

and he didnt mention that you have to rinse the saltfish. its actually so salty u need to rinse it

Salt fish need to soak in plenty water or boiled properly more than once to remove excess salt! !!!!not rinse

MrShanna1984 IT'S UP TO YOU IF U WANT TO BOIL IT FIRST. SOME PEOPLE BOIL IT TO GET RID OF SOME OF THE SALT OTHERS DONT MIND THE SALT SO IT'S UR CHOICE :)

Yeah, I agree. Waay too much oil. You only need enough oil to release the flavors out the seasoning. With the amount of oil he dumped in it looked like him a think bout gravey 😊

Ackee is a national vegetable??? lol im dead.................. this guy tho................ is he really Jamaican?.......... don't think so......#realknowreal............. anywho what happen to boiling the salt fish and pimento and thyme.......... don't make sense to use the name Jamaica if you are not gonna do it the Jamaican way.... Just to show you this is not the Jamaican way do research and find out how many Jamaicans use tinned ackee.

Brittany Bravo...Maybe he said national "vegetable" because ackee is a fruit really eaten as a vegetable. Also, not all persons boil the fish as this can diminish the flavour. A bit of soaking and cleaning the fish of all bones, skin etc is usually sufficient preparation. Some persons also do not add thyme and pimento as they find that these can over-power the flavour of the dish.
