Ah the humble oxtail. It is by far, one the tastiest cuts of meat you'll ever try. Which is hard to believe seeing how it is the tail of a cow! This bovine treat is actually very easy to cook, as long as you treat it with some care and respect.
You can't flash fry oxtail or serve it up medium rare and expect it to be tender and juicy. Oxtail needs long slow cooking to break down all that tough collagen, fat and connective tissue. However, cooked low and slow, it will yield the softest, most tender meat you're ever likely to have.
It's pretty cheap as well, although in recent years the price has gone up a bit, as it's become much more popular. My oxtail stew is a perfect winter warmer, and this recipe will happily feed 2 hungry people. If you want to feed more, then simply scale up the recipe.

To make my oxtail stew you will need:
►About 600g of oxtail cut in to 4 pieces
►3 medium sized carrots
►1 medium sized onion
►1 celery stalk
►2 bay leaves
►1 tbsp of tomato puree
►2 garlic cloves
►1 star anise
►About 1 tbsp of Worcestershire sauce
►About 500ml of beef stock
►About 200ml of red wine
►1 tbsp of plain flour
►Salt & pepper
►Oil for cooking
►About 1 tbsp of cornflour mixed with a little water if you want to thicken the gravy more, at the end.
Serve up with buttery mashed potatoes and some greens of you want them.

I'm in the U S, and am old enough to remember when oxtails were a dollar or two for a tray of them. Now they are as much as steak! Just made my oxtail stew from half-price tails I had in freezer. It was fantastic with tomatoes from a can, bayleaf, garlic/onion, and chili powder!

A stingy meat portion for two. I remember when a whole un butchered Ox tail cost £1. Its a massivy underrated cut of meat, your recipe is very similar to mine, I add swede pieces too and finally, a pastry crust on top for me for last 20 mins in the oven. I cook for 5 hours at about 135 Celsius on average.

Heard you saying cheap cut of meat. In RSA oxtail is so expensive, its actually a luxury cut of meat.

It depends where you go. It's gone up in price a lot over the years. It's still fairly cheap to mid priced here. You could make the same recipe but use another cut of beef like shin or chuck

True story... Oxtail here in South Africa is waaaaay expensive. But, as a treat on a special occasion, well worth it!

Now thats my style Ox Tail, Plain simple recipe like Mom cooked it. I would about add 200 ml (Cup) of original coke and leave out the anyseed. Samp goes well with this also. Mashed sweet pumpkin or sweet potatoes to break down the richness a bit. Deliscious. Thanks Mate..

Thanks for a good, simple recipe, free from "Notting Hill" - style ingredients (i.e., unobtainable anywhere except London). Although I now live in Finland, I can easily get all the ingredients here.

Hi, I enjoyed your video. I found it because I was checking oxtail stew recipes, which I know are delicious. They are normally rather expensive here, but I found some grass-fed ones that were pretty reasonably priced so I bought them even though I was just looking for ground beef. I didn't have the star anise to put in my stew, but I plan on getting some and I look forward to trying that variation in the future. Thank you for not getting on the low-fat bandwagon and telling people to cool it and skim off the fat before reheating it. People don't know how good this fat is for them, especially if it is grass-fed and finished beef! So many people have been brain washed and misinformed that they must severely limit their cholesterol. But our bodies need it and if we don't get it in our diet, then our bodies must make it. They are all busy eating cheap, unhealthy vegetable oils - mostly highly processed and rancid Omega 3 & 6 oils or they over heat extra-virgin olive oils (which creates very bad trans fats when cooked at high heat and should just be used at the very end of cooking or in salad dressings). Anyway, I look forward to checking out your other recipes.

No one ever mentions removing the stupendous amounts of fat. Artery blockers! What I do is I remove the vegetables and meat from the slow cooker after everything is cooked, and place the juicy broth in a cold place. Can be outside or in fridge. I then peel off the fat, discard it or put it in a fireplace and burn it, and replace the veggies and the meat and re-heat. This time, you can use a saucepan as you don't want to overcook the meat and other ingredients as the softer ingredients all but disappear.

This is a really good recipe. It conforms pretty much to my very old family recipe. Instead of the star anise, it suggests a muslin bag containing about a quarter of a tsp. of black (or mixed) peppercorns, 3-4 cloves, a couple of allspice berries and a blade of mace. I have a bit of a love/hate relationship with star anise; it sometimes ends up tasting like cough medicine! I don't faff with muslin bags but use a metal spice ball; these are sometimes sold as tea balls for immersion in the pot. My. mother's oxtail was revered throughout the wider family. I've only just discovered your site and will look in again.

I would just like to say how easy it was making this and it turned out absolutely delicious. Ox tail is very expensive here in Egypt so I don't get it very often. My grandsons just loved it. Your recipes are excellent.

Your recipe looked so inviting I had to try it. Never made oxtail before. It was simple to follow and when completed, the flavors were decadent! The meat was as tender as I could get from any restaurant. I took a photo of what I accomplished and sent to my friends. My compliments to you Adam. Just put mine on in the slow cooker, got my oxtail and some diced beef yesterday and found this really easy to follow. I'm not sure it will taste as good as my Grandmothers but having not had it in many years I'm looking forward to the end result...and the nostalgia of this gorgeous stew. Making this recipe for the third time now and I just keep coming back to it! Truly incredible eating. The second time I made it I put it together early in the morning and just let it go through the day. Think it was cooking for 11 or 12 hours. Didn't even need a spoon, bones came out of the pot already clean

@@martinanugent5045 unfortunately it's one of those trade offs with ox tail. It's quite a fatty meat. What you can do, is as it cooks take it out of the oven every so often and skim off the fat from the top. Glad you liked it though!

I was researching for alternate oxtail stew recipe and after viewing a few, decided to follow your recipe. The only ingredients I did not add are garlic, salt and beef stocking (replace with chicken stock). I start preparing at 11am and use slow cooker to cook for 4.5 hours. The stew is ready to eat at dinner time and it tasted so yummy. :) thank you so much for your video!

Holy Oxtail! Hi Adam, this is my first video I have seen you've made and I had to, just HAD TO subscribe! I am right now making oxtail stew pretty much identical to yours, except I drank all the red wine so I deglazed the pan with homemade beef broth/stock and did not use any star anise as I do not have any on hand. Otherwise it's the same. The smell is amazeballs! Can't wait to feed my hubby tomorrow this deliciousness. I also had pretty much the entire oxtail cut in pieces, so it should truly be fantastic! Love watching and following your videos Adam Thankyou! I followed this recipe yesterday I cooked it in the slow cooker for 8 hours on low. When I tried the meat it was very tough and I ended up throwing the meat away! What could I have done wrong any ideas? I’ve had a look on the internet and from what I can gather I may not have it cooked it on a high enough heat I’m really not sure???

It sounds like it wasn't cooked long enough and was set to low. You needn't have thrown it though. You could have popped it back in, and left it for another few hours. Unfortunately ox tail, shin or any other slow cooking cuts, you're at the mercy of them and they are done when they are done (they won't be rushed 😂) . Try again, and just cook for longer or overnight in the slow cooker 😊

One of my favourite dishes, and I have to agree oxtail is a ‘cheap’ cut of meat and vastly underrated, cooked low & slow and you can take the meat 🥩 off the bone with a teaspoon it’s always soooooooo tender.

Thank you! well, some supermarkets sell it these days, but I got mine from my local butcher, cost me £5 for those 4 pieces which is enough for 2 people.

You would probably need some extra stock and veggies. You wouldn't need to double everything, just use your eye to gauge how much more you want of something. The great thing about this recipe is you can switch it up and change a few things. Hope that helps and you're keeping safe

Hi Adam,thank you so much for the recipe! I dont really like the taste of wine in stews,will it still come out ok if I just use beef stock or water? And can I omit the star anise when substituting out the wine? Or is it still ok to use it? Am I only to use a table spoon of flour? The last recipe I tried called for 1 and 1/4 cups of flour to make the gravy as well and all the flavor got lost with me trying to thin out the gravy from all that flour so I'm a bit weary of using too much or too little flour

You can omit the wine no problem, just use a bit more stock instead. the star anise helps bring out the meaty flavours so you can use it still. as for flour, a tbsp is about right for this amount. if its too thick for you though just let it down with a touch more stock as it cooks. I always make more stock than i need just in case. any leftover stock can be frozen too :)

I was so excited to try this recipe this week, but alcohol sales are banned in South Africa so I can't use wine. Do you have any substitute suggestions for me or should I try the recipe as it is without wine.

Oh I’m having a right debate with myself Adam ...Never tried a slow cooker,scared of cast iron,or invest in Le Creuset life time oval casserole 🤔Everyone seems to be choosing a slow cooker but I’m stuck,I can’t make a decision to save mi life lol All that aside yours looks lovely,no purée for me lol 👍🏻☺️

Slow cookers are great if you want to feed a family but you don't have the time to make a big meal In an evening say. You can just leave it on all day and dinner is ready when you come back. I absolutely love cooking so a cast iron Dutch oven is what I'd use most of the time. To be fair though slow cookers are dirt cheap so you could probably get both. Think mine was about 20quid.

When doing this recepie, if I do the prep at night, should I still toss everything in the slow cooker pot the night before, keep in fridge overnight and then toss on cooker in the morning? Or am I good to start cooking in the night prior and eat it when I get home from work the following day?

Dan Hughes it's very rare it gets that cold here. I don't think it dropped that low to be fair. Our newspapers (some of them) like to just inflate the truth somewhat. Was probably more like -4 lol
