After learning this method, I started making croissants at home.
Croissants with walnuts and cinnamon.
RECIPE for croissants with walnuts and cinnamon.
80g sugar.
5 g dry yeast.
250 ml warm milk.
Mix everything well.
1 chicken egg.
2 tablespoons vegetable oil.
Mix everything together.
Sift 400 g flour.
5g salt.
Knead the dough with a spatula.
Sift 100 g of flour onto the table.
Place the dough on the table.
Knead the dough with your hands.
Total amount of flour 500 g.
Form the dough into a ball.
Grease a bowl with vegetable oil.
Place the dough in a bowl.
Cover the dough with cling film.
Let the dough rise in a warm place for 1 hour.
For the filling:
Grind 100 g of walnuts.
50g sugar.
1/2 teaspoon cinnamon.
Mix everything together.
The dough turned out well.
Place the dough on the table.
Form the dough into a ball.
Divide the dough into 8 parts.
Form each piece of dough into a ball.
Cover the dough balls with a kitchen towel.
Leave the dough on the work surface for 10 minutes.
Sprinkle the table with flour.
Roll out dough balls with a rolling pin.
Dough diameter 24 cm.
Grease the dough with softened butter.
Total amount of butter 100 g.
Layer the dough.
Grease all layers of dough with butter.
Place the nut filling on the dough.
Use nut filling every two layers of dough.
Repeat after me.
Place the dough on a board covered with cling film.
Cover the dough with cling film.
Let the dough rest in the refrigerator for 30 minutes.
Sprinkle the table with flour.
Place the dough on the table.
Dust the dough with flour.
Press the dough down with your hands.
Roll out the dough with a rolling pin.
Dough diameter 50 cm.
Divide the dough into 12 parts.
Make slits in the dough.
Roll each piece of dough into a log.
Place the croissants on a baking tray lined with baking paper.
Cover the croissants with cling film.
Let the croissants rise in a warm place for 30 minutes.
Mix egg yolk and 1 tablespoon milk.
Brush the croissants with a mixture of egg yolk and 1 tablespoon milk.
Bake croissants in an oven preheated to 180°C for 20-25 minutes.
