I worked for a Pizza Hut franchisee from '77 to '91 and I used to make the sauce and dough from scratch. The thin-n-crispy sauce was surprisingly simple at that time. Our typical batch was 3 #10 cans of crushed tomatoes know as 3 in 1 sauce plus I can of water. The seasonings were a lot of oregano, salt, black pepper, parmesan cheese and I think, granulated garlic only. Very heavy on the oregano. Simple and delicious.

Interesting! Thanks for stopping by our channel and sharing your memories about the glory days of Pizza Hut. I'm sure the sauce they use now isn't the same as back then... too many people have told us that it tastes different now (and the consensus is that the old version was better.) I think generally speaking, simpler is better!

Back in the day I worked at Pizza Hut as an assistant store manager. We used the #10 cans of paste, added water, and the seasoning which came in pouches. We made it at night and stored in the cooler so the spices all melded together. We made the dough fresh, usually twice a day - thin, Pan, and eventually the Hand Tossed when it was introduced. The yellow onions and bell peppers were fresh and we had to dice in a dicer every day. Sad that now Pizza Hut is basically a Totinos like pizza, frozen but just 'assembled'. Employees at the local Hut tell me that the dough is pre-made and frozen (and you can tell the difference now), veggies are frozen now and not fresh diced, and the sauce is definitely different and comes pre-made. The 80s Pizza Hut was much better IMHO.

We totally agree. The quality is definitely not the same as it used to be. It's a shame when companies try to cut corners and the end-product becomes diminished. It seems like it's just become "fast food" when Pizza Hut used to be more of a restaurant experience, sigh. Thanks for stopping by our channel and sharing your memories!

That's exactly how we made the sauce in the mid 80's: tomato paste, water and seasoning pack. And sauce for the taco pizza was refried beans and water.

I worked at Pizza Hut from 85 to 87. We made everything...the dough, sauce, and chopped all the veggies every day..

If anyone wants to make a smaller amount of this recipe, here are the amounts for 1/8 of the recipe. (it still makes a lot) 1/4 onion (this will be about 1/2 to 3/4 cup diced onions, depending on the size of the onion) 1/4 bell pepper (about 1/4 cup diced bell pepper) 1/8 celery stalk (or substitute a pinch of ground celery seeds or 1/8 teaspoon of celery salt) 1 garlic clove 1/2 teaspoon salt (to taste) depending on whether you're using unsalted tomato sauce 3/4 teaspoon black pepper 1 teaspoon dried oregano 1 - 29 ounce can tomato sauce 1 - 12 ounce can tomato paste I pureed all the vegetables in my food processor and then added all the rest of the ingredients and processed it until smooth. I forgot to mention, I heated this just long enough to bring it to a slow boil and simmered it for a few minutes. Cover while simmering, because it will splatter everywhere. LOL

I remember the 70's Pizza Huts, before they replaced the fireplaces with salad bars and buffets. It was my favorite place to go on a cold snowy Michigan evening.

When I was a kid back in the early 2000's, we would get Pizza Hut Coupons for selling a certain amount of cookie dough for fundraisers. My favorite was always Canadian Bacon. Flash Forward to 2009 when I was diagnosed with Celiac Disease. However, there's this place in Oklahoma with gluten free pizza called Hideaway Pizza.

I have Celiac too, such a bummer. I was diagnosed a couple of years after you. It's always nice to find a new place that has good GF options. Do you have a BJ's Brewhouse near you? Their GF pizza is excellent as well. Thanks for telling me about Hideaway - good to know for when we're traveling in Oklahoma.

80,90’s, 2000, 10 and 20’s always love me some Pizza Hut lol 😂 I watched a show which showed like the start of Pizza Hut. Yes the Kirkland tomato paste we get as well. Might have to try this recipe thanks for sharing

Back in the '70s and '80s Pizza Hut actually made excellent pizzas. Then about 1992ish it went bad (probably bought out by another corporate giant) and was nowhere near as good as it was in the 1970s and '80s. It used to be so delicious! Not since the early 1990s has it been anything close to what it was.

I did have some great times at Pizza Hut....I remember when they did promotions for things like The Land Before Time (one of my favorite films). I also remember the jukebox and remember thinking the pizza there was really good. Some people I knew would have birthday parties there and would get a personal pan pizza.

Oh yes!! The jukebox and Pac-Man game were my favorite part of going to Pizza Hut (and of course the pizza too!) We've recently started collecting some of the old promotional glassware from there. We have some of the E.T. ones and a complete set of the Care Bears glasses. Land Before Time was a great movie too!

Pretty sure they are still the same as when I worked there 16 years ago....pan pizza dough in a square pan with "buttery flavored seasoning oil" and parmesan with parsley.

I love Pizza Hut. The original site was very close to Kellogg. They saved the building by moving it to WSU when they built the flyover.

You're right! And then they relocated it AGAIN to a different part of the WSU campus when they made the museum. Can you believe that little building has been moved twice?! Definitely worth saving!!

I love you guys, all of it!!! Plad table cloth, yep. Red plastic cup, yes:) The hut was so great in high school (all you can eat at lunch) I have learned one thing over the years with pizza sauce, burn it!! That is where the awsome flavor comes from.

Really?! We need to burn the sauce for extra flavor? How interesting! I thought it was weird that the recipe never mentioned heating the sauce, but I figured it would be cooking on the pizza anyway. Next time, we'll cook it.

I Live in Australia, and i remember the pizza hut sauce from the late 70's ........ It was very peppery and american style, Too bad they changed it. Big Corps think they know what there doing but sadly they all fail us. Same as domino's in the mid 80's also changed there recipe was very good they also failed = Hopeless Cheers From Down Under

I'm gonna try this. I was telling my family that my favorite pizza was from Pizza Hut when we first went in the late 1970's. I'm guessing this is the same recipe. My memory of that pizza is still so real to me that it's difficult to enjoy other pizzas. I recently mentioned to my brother....it's the oregano....the sauce today is missing that oregano. Thanks for this.

Man, talk about a lost part of American culture! There are still some local chains and "Mom and Pop" pizzerias that use the round red pepper shakers and red drinking glasses out there if you look. I love to eat at restaurants like that to help support what they're preserving. I remember being at one and playing a vintage Pacman arcade cabinet. That was in 2016 or so, so they are still out there! The sauce looked so good, thanks for sharing!!

Thanks Evan! We agree, local restaurants are usually better. We always try to seek out places like that, especially when we travel. The last time we played Pac-Man was a couple years ago, and it was harder than we remembered... I guess we're out of practice, sigh.

@@Our80sLife I bet! When I played it last at the pizzeria I got confused why I was losing after eating all the pellets. Turns out, the last top two inches of the screen was broken so you had to guess where the pellets were! Talk about an extra challenge.

Working the buffet was great! our restaurant ran a lunch buffet every day up until 2015 I think? I left in 2012. Shipyard workers loved it and all I had to do was throw in random pizzas and check people out. Now when the server called out....that was a very active day.lol It's amazing how much you can do at one time when you are thrown a curve all. I was really sad when they spun the wingstreet(what it used to be called) brand into every pizza hut and dropped the older baked wings. I LOVED the baked unbreaded wings. Now they put deep fryers into all the stores...that gigantor pizza oven made great wings. Came back to edit my first comment and it was gone...sowwy, little too much

@@Our80sLife twas an odd time.lol alot of bad, but way more good. I played in the western Washington pizza hut inter store golf tournament!!!! It was exactly as bad as it sounds! Very fun Tho. Ohh, que papas! I'm very curious if anybody remembers those, jalapeno cheese filled tater tots! Soo many odd things. The caramel bread sticks with dulce de leche dipping sauce were great

For whatever reason it's 1:32 in the morning and I'm making sauce so I decided to make this it's coming out really good tastes pretty similar. I think you guys are adorable though with the pizza story. I love Pizza Hut it's delicious. I wish a girl would bring me Pizza Hut

No joke because of this video I just remembered since we don't have Pizza Hut here unless you go to the small pop-up place at the Target which is a clothing store I guess. I actually on a daily basis drink out of a red cup just like that it comes from Pizza Hut I just realized that

I managed Pizza Huts back in the 90's and the sauce was made in house with pre-portioned bags of "tomato concentrate", added water and packets of pre-measured seasonings. The ratio to mix was the only information given to avoid anyone stealing the "recipe". There were different color-coded seasoning packets depending on whether it was for pan, neo or pasta sauces. I have come close copying the pan dough but the sauce is always "off". I will try this recipe and see...

Interesting! It's amazing to think about how quickly Pizza Hut grew back in the day. I'm sure the 90's sauce in a bag wasn't exactly the same as the original recipe, but who knows. Anyway, it tasted pretty dang close to what we remembered, and the pizza turned out great. Good luck!!

Looks great! Cool idea to make their sauce. The restaurants back in the 80’s definitely had a different feel than they do now! Today if you go out to eat it’s more rushed & people appear to have forgotten how to talk to each other because they spend so much time on their phones etc! Oh, & love the pac man T-shirt!

Awesome!! You are so lucky you live near the pizza hut museum! i wish I could go there! How did you make that retro pizza hut background?!! That was so cool! I miss the 80's pizza hut so much! i have been sending messages and comments to pizza hut on instagram and facebook, begging them to bring back the retro stuff, since 2014 and i think they actually listened to me! Hahahaha. I mean I bombarded them with comments and messages, lol. I really hope they bring back more of of the retro decor. I'd love to see them make those pizza hut track suits that you see the guy in the commercial wearing! I'm dying for one of those! I miss everything about pizza hut in the 80's!

If they were smart, they'd capitalize on the nostalgia so many people are feeling nowadays, sigh. We made the background using a green screen. I love the little scene that you two set up at the end of the video! ^_^ It's like you guys were actually at an old Pizza Hut restaurant! I was born in 1983, so I remember when their restaurants looked like that in that old photo! And I love 'Pac Man'! I don't remember if our old Pizza Hut restaurant had an old 'Pac Man' arcade tabletop (cocktail) cabinet when I was a kid, but I do remember that our local Quik Snak restaurant had one! They were a small, local restaurant that served burgers, hot-dogs, French fries, milk-shakes, etc.! :D

I love Pizza Hut. They're my #2 favorite pizza place. Ours is still open here in 2023. They recently remodeled the dining area, and they also brought back the classic logo on the sign, but the roof is still black instead of red. Also, they brought back the classic lamp shades. I eat from there for lunch on Sundays sometimes. In Teenage Mutant Ninja Turtles II: The Arcade Game on Nintendo (a.k.a. The NES), Pizza Hut logos can be seen in the background on some of the stages. I just saw the museum video. That was dope. Made me hungry for pizza.

I did learn to read the address system in cities and towns. That is a skill I still use today.

For a last call one night I had to go to a trailor park that was pitch dark because there were no lights. A pizza delivery man with a pizza and a bank bag of money in that situation is a sitting duck.

We haven't tried making the deep dish pizza, but I found a good copycat version here: topsecretrecipes.com/pizza-hut-pan-pizza-copycat-recipe.html According to the Top Secret Recipes website, Pizza Hut uses soybean oil (which is probably the most commonly used oil in restaurants because it's cheap. I don't think it imparts much of a flavor, like olive oil does.) Best of luck with your pizza endeavors!

I worked at a number of pizza places, one of them hadn't changed since the 80s. One thing I know we did that made a huge difference in the sauce was putting all the spices in a container with water and oil and microwaving the heck out it before pouring it into the sauce. The cheese combination is astonishingly difficult to get right, because it's rarely the same from different suppliers, and even different times of year. Getting that stretchy melted sweetspot takes a lot of experimentation. I don't recommend the fancy salt like you guys used without the heating the spices trick. Any old iodized salt will be best as long as it doesn't have any weird anti-caking ingredients. I think you nailed the basics though of 80s pizza. It's mostly just plenty of salt and pepper, and noticeably more than the modern market is used to. Some places even use SUGAR now, yuck!

We got our spice packets from the elderly mother of the italian guy who owned the place, and she was always adjusting things based on what the ingredients were like. People would complain if it didn't taste like they remembered.

I really miss the old pizza hut pizza, especially the pan pizza. They changed their pizza over the years in many ways to make it cheaper, supposedly healthier & to cook it faster through those conveyor belt ovens. It's very sad & they wonder why their profits are dropping like mad. I wish they would just go back to the eat-in restaurants, using real pizza ovens & making their old real "ORIGINAL" Pizzas like they did in the 70s & 80s or prior! That's what the customers want. People's comments are all over the internet wishing for them to go back to the Old Original Pizza Hut. Also, many many complaints about the changes that pizza hut has made over the years, while trying to fool it's customers. They should care about the quality & what the customers want. That is what makes a business successful. Not turning your beloved pizza into crap that makes people sick when they eat it. I'm researching all over to try to make the original pan pizza. I found this same sauce recipe on the napkin in a picture & i planned on trying to make it. I'll definitely try your method. Any ideas on the original pan pizza crust?

Hi Harry! Thanks for stopping by our channel and sharing your thoughts. We agree, Pizza Hut should seize this opportunity of customers' nostalgia and go back to its old-school ways. The company began here in our city (Wichita, Kansas) but it has franchised out and changed hands a number of times over all these years, so it's not being run by the folks who started it all. I think we nailed the original sauce recipe, but we haven't attempted to recreate their crust. For this video, we made our own homemade crust recipe (which is gluten free because I have celiac disease) but it's much thinner than Pizza Hut's pan pizza. Although we haven't had it in years, I can still remember how delicious it used to be, almost buttery. I've seen several copycat recipes online which sound promising. The closest we've found is actually an older Martha Stewart recipe which is made on high heat in a cast iron skillet. That combination helped achieve those crispy edges we love while still maintaining a softer, bread-like pan crust. Yum!! Wishing you the best of luck in your pizza-making endeavors!

Now a days they are my least favorite pizza by far but as a kid I really liked it. My main complaint is the flavor of the sauce. So maybe they need to go back to the napkin recipe hahaha

We don't know about the Pizza Hut portions, but as a general rule, PizzaToday.com recommends 1-ounce of dough per inch of pizza diameter. Hope this helps! Thanks for watching our video :)

I managed and worked at 3 Pizza Huts 1970 untill 1975 and the sauce recipe isn't close to the sauce made in those years. They use Puree and whole peeled tomatoes run through a mouli mixer
