As a tip, the salmon skin that’s left behind, dry it and put it on a sheet of parchment paper. Then put it in the oven (something as mini as a toaster oven will work) and bake on low (~150F). It’ll crisp up and you can break into strips and use on toppings for your salad, veggie side dish or even on top of your salmon for some extra taste & texture. The skin will also contain omega-3s so there’s a health benefit as well.

My carb-o-furnace (the hubbie) with the truly impeccable palate, wanted something creamy (but not, cream cheese, or yogurt.... or....) Oh, parm - he wanted the king of cheeses. Next time we ride with that! I have been making this as a stove-top poached in white wine trout dish for years, I made it up, but was probably inspired by a bagel somewhere along the line too, it is one of the things I make that my mom most loves, and I do it regularly for her June birthday.
