Ugggh when you say huge difference... I would love to see how it came out without the baking soda

It won't be cakey. It would be kind of like tamales 🫔 lol. No pores, just a sticky (at it's core), very dense, sweet tasting mound of moist dough... just like most baked alkaline pastries. Adding some ripe baby bananas (mashed) may make it bearable. Sea moss won't do the trick. Neither will sparkling water... unfortunately 😥
