My pellet smoker is acting up right now, so I've had to use the propane grill, but I know what I'm making when I get the smoker up and running (even if it is after Saint Paddy's). I love shepherds pie. I really do. Ever since I was a kid and my dad made it and the potato used to get crusty and bits of it burnt on the tips but when I decided to use mashed cauliflower instead of potato and still add cheddar and Parmesan cheese it took the dish to stratospheric levels. INCREDIBLE. I'll never use potato again in this dish. I sometimes throw some peas and carrot into the mince with a splashing of Worcestershire sauce. Thats all it takes. The mash I make is with full cream milk and butter

Made this today. Went with beef only as my wife is not a fan of lamb. Simply the best Shepherd's Pie (ok fine Cottage Pie, you know what I mean) any of my family have eaten. I followed the recipe very closely but also added I cup of frozen corn for texture and colour. I went with the Le Crueset braiser pan instead of my standard cast iron skillet. Glad I did as the Le Crueset was the perfect size. My standard size cast iron skillet would have been too small to handle this. Love the the videos. Keep them coming. Happy St. Patty's Day to all!!

I made this and can attest it is an AWESOME recipe and like the chef says you can customize the recipe to your liking. In my pie I added a TBS of Worcestershire sauce to the gravy and also put a little beef broth and Guinness in the foil when I wrapped the meat. My whole family enjoyed this. Thanks chef Tom!

Looks absolutely out of this world delicious. I would add a little ground bay leaf to my shepherd's pie filling, and throw some Parmesan on top, but everyone has their own way. That potato ricer is a nice little gadget. Wouldn't mind having one of those in the kitchen.

You know, growing up in North Dakota in the 1950's and early 1960's everybody made Shepherd's Pie but it was always with hamburger! I was in my 60's when I learned it was to be made with lamb and the Brits call both lamb and sheep mutton. Made it a couple of years ago and my friend Simon, from Wales was there. He didn't believe me when I told him it was the first time. Thanks KZbin; I've learned a lot!

According to my 100 yr old grandmother, she says most of the stuff we ate was leftover or traded with neighbors who had veggies or poultry you didn't have for bread or even beef, milk from the cow or several different things. Hey Chef Tom. I love your videos and being a Firehouse chef for much of my 32 year career, I know a real chef when I see one, not just another backyard BBQ pit guy. I'm curious if you're going to smoke a Corned Beef Brisket this year. I saw a recipe on the Traeger channel, but I was hoping to have you walk us through a smoked, then beer roasted brisket. I believe that I need to smoke it for about 2-3 hours first. Not wanting to brine it myself so I bought pre brined briskets. Thank you.

Irish comfort food? Shepherd's/Cottage pie is a very common dish cooked across the British Isles. Typically they are cooked using minced (ground) lamb or beef for shepherd's/cottage pie respectively. Traditionally they are simple dishes but I would not call them peasant food. I would call them family food and they are especially good during winter months where traditionally the choice of veg was limited. I live in Wales, a part of the UK that is known for high quality lamb and I grind lamb shoulder at home to make Shepherd's pie. I make my mash from Maris Piper Potatoes and pipe this on to the meat base before baking in the oven. I did enjoy watching your take on Shepherd's pie and it looked very good. I set you a challenge of cooking a traditional Welsh Cawl on one of your grills! I'll be even more impressed if you can pronounce Cawl correctly (hint it is a Welsh language word).

I just clean my cast iron skillet with a scrubbie. I just do not see any logic to letting a layer of crud build up on the inside.
