One was Guava and the other was a chocolate whipped cream with Chantilly frosting on the top. The red dessert is my li-hing mui lemon bar, it has a macadamia nut shortbread crust, and li-hing powder, lemon peel, seedless li-hing seeds, and crack seed syrup in the filling. Purple dessert is my ‘uala crunch. Macadamia but shortbread, with a coconut and sweet potato filling, topped with a coconut cream cheese whipped frosting 😋 Can’t wait to try some of the other vendors you showcased in your vlog and hope to see you both another time! I'm a Chamoru from Guam! :) The coloring of the rice comes from achuette - the rice, among some other of our local staples were introduced by colonization. The rice in particular was through the Spanish colonial era, but from the Mexican laborers who worked for the missionaries. The rice is usually cooked with achuette water for color, some salt, garlic, and onions for flavor; but if you're fancy - bacon and green peas are added too. The sauce is fina'denne' (it means, to be made of or like hot chili peppers) and we have a few different types with the same concept - soy sauce, lemon, vinegar, and tuba vinegar (made from fermented coconut sap).

The chicken salad is called, "kelaguen" (kelly-gwen). It can be made with chicken, beef, deer, fish, shrimp, octopus, and some clams. The concept is that lemon juice cooks raw meats (not the chicken though - this has to be cooked to a safe temperature) and hot chili peppers and other flavorings are added - almost like ceviche.

The Guam sauce is finadene, my fav! Next time order the pork ribs! And the stuff next to steak is kelaguen (usually chopped chicken with lemon juice). The red coloring/flavoring in red rice is Annatto. 😊 what a fun video! 🌈🤙🏼🌺

Håfa Adai from Guahan (Guam)! Love your videos!! Red rice gets its flavor and color from Achote seeds. The side dish you thought was Larb is “Chicken Kelaguen”. It’s a dish usually made of chicken, ground coconut, lemon juice/powder and donne’ (hot pepper). The sauce is finadene’ - soy sauce and vinegar. Hope you could visit Guam one day.☺️

Nothing like Chamorro potato salad! Havent found anything close to it. Short ribs are likely marinated in soy, vinegar etc.. red rice made with bacon fat instead of butter is the best. Can eat it by itself.

What an assortment of food! Everything looked scrumptious! The shrimp patties looked really good! Thanks for supporting craft fairs! My wife is a vendor at mainland Asian craft fairs and with the pandemic they were all canceled last year. If you’re ever in California please look her up. I provide the hard labor. She’s the talent! She sells Japanese Kokeshi dolls with ceramic bodies and gourd heads. She also sells Asian jewelry.

Need to come to this side more often, I usually eat at Adela’s across the street 🤤. When you’re on the north side I think a review of Kahuku farms would be awesome. Especially the farm pizza, grilled banana bread with Haupia ice cream and smoothies. Something super fresh, delish and family run farm to table business 😊. Beautiful views too.

We enjoy your videos so much! We were in Honolulu last month and went to as many restaurants that you visited as we could. Our favorite was poke from Tamura's. We ate it at a park, dodging monkey pods.

Love this one! Just about every food item except wings are completely foreign to me. Never seen before or not to that level ( huge tempura prawn). The bracelets you got are really cool and she really knows how to market. Beautiful presentation and quality! Felix yours really looks good on you and masculine looking(most important). Omega on one hand ,black onyx on the other is badass. I'm a dude and the only jewelry I like is Omega and occasional heirloom Jade necklace. Lastly,I happened to love how long this video was. I always feel like your vlogs end too soon. So my vote is for as many long vids as possible even if editing is non- existent. Seeing more of you guys is key. 👍👊

Yes kelaguen but also Finadene sauce I think! Amanda they use achiote seed and I think bacon for the color and slightly smoky flavor of the red rice! So good!

Fiesta plate, yum. Yeah, potato salad is american style on Guam, but its less common in fiesta plates from food trucks because... food poisoning is not cool. It's more common to either have a pickled salad (usually cucumber daigo kimchi, pickled cucumber in soy sauce, or standard cole slaw) or Pancit bihon in place of the potato salad.

Nope. That's not authentic chamorro style. That's modifications from lack of real achiote or taste preference. I'm a purist, so I prefer making red rice fron actual achiote seeds. Their red rice is made from Sazon Goya (achiote with cilantro) The "larb" is kelaguen Sauce should be finadene'. Most families have different styles and taste, and there are more people using Sazon Goya for their rice, but og is to use achiote seeds. The potato salad is too plain.

Everyone, please pray for people in Hawaii and anywhere else people are worshipping water, nature, etc. They are actually worshipping marine spirits which is not good.
