Amazing slicing skills. He’s an artist indeed. This is a beautiful King Fish. In English it’s also called the Seer fish. It’s called ‘Arakkula’ in Tamil and ‘Thora’ in Sinhala. It has very less bones and so is liked by children too. It tastes great for a beer batter fry or as a simple Sri Lankan style fried fish. We do make a great curry too, adding coconut milk, chilli powder, onions, green chillies, garlic, fennel, fenugreek and tamarind paste.

I was at my local fish market yesterday and the staff were cutting up the daily catch...they were so efficient that in my 20 minutes at the store I received my order of fillers in u Der 10 minutes....no bones or scales.....left with 10 lbs of pickerel and 3.bs of perch....I think the staff are from Asia....nothing was wasted... was amazed by their experience...this morning I had my first ever Talapia fillers with a soy...spicy....just saying that they were awesome 👌

I'm not sure about the best. This is normal for most fish sellers at the market. Also the hygiene on that cutting area is questionable. Too many grooves and cut outs to harbor bacteria

@@7xr1e20ln8 not so my friend. A common meat infection is salmonella. Look it up. Most modern markets have stainless steel countertops to ensure the highest level of hygiene practices. It is very possible to purchase contaminated meat from a vendor.

Its for convenience, there are fish markets in the west. But people avoid the hassle and the smell! I've been to a place like that, awful smell, and 20% chance you get cheated with spoilt stuff.

You can, just not this way. Personally i really don't like bones in my fish. Also this way of cutting fish can introduce that "fishy" smell if used for lightly seasoned cooking and certainly would not eat raw. For personal use check japanese fish cutting technique. More time consuming sure, but more clean and can be done with usual knife easily. I've cut up to 30kg fish with usual knife. Just sharpen it well before use.
