I call that the limestone jello. It's definitely an acquired taste. Northern Laos (near China) people make it it with a tomato based broth that is spicy and sour.

To get the "milk" to coagulate you need divalent cations (in this case Calcium ions from the lime stone). Magnesium ions also work. Calcium from gypsum also works.

If you add lime water to your batter mix or deep fried snacks it will stay crispy longer. Also, it'll help keep deep fried glutinous flour hold it's shape better.

Keeping raw eggs submerged in lime water will keep them good for up to a year also. They won't turn rotten.

*You take the stone to burn to make lime and then take the clear lime water to mix. The use of lime water in making cakes flexible, tough and clear. Clear lime juice is used a lot in food and it is quite safe. If the lime water is not handled well or given too much, it will cause the cake to have a strong lime smell. It's not new but it's interesting, it's great guys, love to watch videos like this.*

*Lime is used in commercially making tortillas. Sometimes it smells strong (to me) and reminds me of the chemical used in hair relaxers.*

@@merlita8707 It is not the same. Slaked lime water is calcium hydroxide. Lye is sodium hydroxide, aka caustic soda. The latter can be used in cooking but only in very small amounts and cannot be consumed on its own without causing severe burns to the mouth and throat.

@@DarkMage501 There is archeological evidence of lime being used in foods and construction 20,000 years ago. We have known about the strong alkaline properties of lime for a long time. Humans most likely discovered this by accident through the transfer of hot rocks in order to boil water.

She is not eating stones. She is extracting limes from the stones, using the powder to make limes water in order to make tofu. Limes is rich in calcium mineral. It is safe to eat.

i'm Native American from the Navajo/Diné tribe in the US, & we use white clay (we call it dleesh) is used to sweeten a sumac porridge. the earth will provide as long as you know what to do with it. much love. 🙏🏽❤️

salt is also a rock but we break it down similar to this. of course salt adds flavor whereas lime doesn't, but it does improve the texture of flour based products. it probably started as some traditional medicine type thing rather than just, "lets nibble on this rock and see what happens!" lol.

We eat this with either a pepper, cilantro, like juice, and fish sauce over the cold cube noodles. Or either pepper, cilantro, fish sauce, fermented bean paste, and a bit lime juice.
