My Palestinian husband is a very picky eater and this recipe is perfect! We lived in the UAE and we frequently visited the local sweet shop to get Knaufa. I make this recipe often for him and he loves it! The only adaptation I make is to the syrup…I use 2 cups of white sugar, 1 cup of brown sugar, and half cup of honey. I usually add the juice of a whole lemon along with the vanilla. Thank you for sharing your recipe! It’s in the oven as we speak!

I just did this recipe. Turned out great! But I only used about half the simple syrup. That was a LOT of simple syrup. Good thing I'll probably be making it again soon so I can just use the other half then.

Can i answer When you use the akawi cheese you have to slice it then put in water for 2 or 3 hours to make it sweet so you can use it for any kind of sweet but you have to drain it so good You could mix it with motzarella cheese to make katayef or knafa

Hello I wanted to ask you why do you have to soak the mozzarella cheese in the water ? And the ghee u use wouldn’t it be to heavy tasting? Thank you !

Ghee is not heavy tasting because all the flavors come from the kunafa, sugar syrup and the filling. It just gives it a rich taste. Also soaking the cheese in water is good to remove salt from the cheese, which is great for akkawi cheese for example which is very salty but i don't think is necessary for mozzarella. I personally never soak the mozzarella. If you are interested to see more ways of making Kunafa I have a new video on my channel showing two different flavor fillings for mini kunafas :)

Yes you can use fresh mozzarella but ghee gives more authentic flavor

@@xman31401 I know this is a late response, but you can make your own ghee by melting butter, gently boiling it for a minute then straining the milky liquid and solid bits out. You're best off ladling and spooning the ghee off so that the white parts floating on the top and at the very bottom don't mix with the yellow liquid- the yellow liquid is your ghee. You can store it in a jar in the fridge.
