Julia and Bridget Bridget and Julia are both awesome cook's. There're simply great. Both make delicious meals, desserts, appetizers, cocktails, sauces, side dishes. Everything they make is wonderful. I've been watching them for decades now, and was never disappointed in anything they've made. Plus they're both so interested in other cooks. Really congenial. Lovely ladies.

an interesting recipe, nothing too out of this world. I love that you used shiitake mushrooms. I once made a beefless beef stew using those as the base, and it turned out amazingly.

Made this last night. Used baby bellas instead of shiitake, and didn't have anchovies. But still turned out excellent! Loved the sauce made from the meatball remnants.

Great recipe! I'm one of those who can no longer eat beef [sigh. I'm old and my stomach simply can't digest that protein any longer, but it can turkey!]. And, I love Bridget's way to figure out when the pasta is done: take a piece and toss it against Julia's head. Too funny!

Hi, I make my turkey meatballs with pork rinds for the breading, like about 2 cups, crushed along with 1 large green pepper and 1 medium onion chopped as finely as I can, seasoned with salt and pepper and a little garlic powder, I make fairly large size, about tennis ball size, at 375 degrees, and they taste really good, I do not really care for tomato sauce, it gives me heartburn, so I use a gravy with it, my husband really like it and it is not tough at all but pretty tender

With this recipe, you could leave it out as long as you used the dried mushrooms, which add a HUGE amount of flavor to this dish. The anchovies add flavor, but it will still taste great without them if you can't have them.

Use your KitchenAid stand mixer with the paddle attachment to mix and keep your hands clean.

But it's way more work to get out the mixer, assemble it, disassemble it, clean it, and then put it up, than it is to just wash your hands. Not to mention that your hands will still get dirty when you go to take it apart after using it

Not. Throw everything into the bowl, mix with stand mixer, form balls with ice cream scoop. Wash everything in dishwasher. Ditto for meatloaf.

@@canadaglennrz Who puts a bowl with smeared meat and fat in the dishwasher without first getting the extra off? It takes no longer to just wash it. Same with the scoop, and it doesn't even save you any time unless you don't mind them being super flat on one side. Which is horribly lazy. And that still doesn't include getting the mixer out and putting it back up. I know many dozens of people with a stand mixer. Only 2 of them keep them out all the time, because they use it almost daily.

Both of my KA stand mixers and my Vitamix sit on my counter top. And TBH I've never made meatloaf or meatballs without using my stand mixer. You do it your way, I'll do it mine. I'm not going to get into a pissing match with you. Martha Stewart recommended this way and I've always done it.

No reason to make a tasteless turkey italian meatball folks, sorry on this one ATK, i use 85/15 ground chuck( less grease) and ground pork with the seasonings for italian meatball. 50/50 on beef to pork ratio, delicious. To many folks are getting wrapped up in these fads of turkey meats, and gluten free garbage, now if you have an allergy related to gluten i understand that, but not because it is the trend. I'm type 2 diabetic, i use equal/nutra sweet in place of sugar, and i watch my carbs, but some of these food subs ingredients are out of hand.

If your Italian meatballs are tasteless, that's your fault. Learn how to cook with turkey before bashing it. No two meats are cooked, or seasoned the same. And there are many people who actually love the taste of chicken and turkey. Some, like my daughter, much prefer them over beef for most things.(and she hates meatballs made with hamburger)

Steve, I understand your reluctance. Turkey meatballs? Yuck. But tonight, I gave this a try. It's absolutely delicious. It's so good that I won't be making meatballs with beef for a very long time. (And as an added bonus, turkey is cheaper than beef, although the cost of the dried mushrooms brings the cost back up.)
