After viewing this, I did do a small lasagna for 4, actually for 2 but left overs for 2 more. Usually only make lasagna for a crowd. Much more manageable making smaller size. Also tried the fried artichokes, I really do like artichokes but never er had fried before. To be honest: it never made the salad. We snacked on them & we're very, very good. Bigger batch next time. Thank you for great recipe.

I discovered by accident that artichoke heart slices pair very well with shrimp cocktail sauce. A great alternative for parties to have a simple vegetarian option to shrimp cocktail. I'm going to try my air fryer with potato starch instead of the corn starch to make a crispy coating on those artichokes for this meal. Thanks for this weekday lasagna idea!

I don’t like frozen leftovers that have been pre-baked. They’re too hard. I don’t pre-bake any casseroles if I can avoid it for this reason. Since it just two of us, I use 8x8 pans and divide the casserole into the two dishes (instead of one 9x13x2 inch pan). I think I’ll try this recipe, and if I Ike it, double or triple it.

I made this for dinner tonight, followed the recipe exactly and it turned out great. I think I put in a little too much salt. After it was done baking it was still a little soupy around the edges but that went away after the rest period. I rested it for 30 minutes which I think is too long. It was perfect for the two of us, with a piece left over for tomorrow night.

They do have a whole cookbook of them, a few actually. There's a big one called Cooking for Two (650 recipes) and it was published over ten years ago. The updated 10th Anniversary edition of Cooking for Two was published earlier this year. There's a smaller All-Time Best Dinners for Two (may be out of print), Vegan for Two and the upcoming Baking for Two.

I can’t believe you put that lasagna in the oven without putting a baking sheet under it. In the real world, that WILL bubble over, and you’ll be stuck cleaning the oven. Other than that, looks good, but as others have noted, I’d never bother making one that small.

It looks like it did bubble over, but seeing as we didn't see right into her oven, how do you know there was no sheet pan already in there on either the rack where she placed the lasagna or possibly a rack underneath? 🤔Or maybe Wolf just comes along and replaces the oven when it gets really dirty.

Making a horizontal slice in the onion does nothing to help chopping the onion.

With out the horizontal cut, the onion pieces will not be a uniform if you slice vertically straight through the onion unless you cut radially following the arc of the onion's rings.

@@garywallenphd885 That's your educated comment on the topic?!?!?!?!?!? If I can make the effort to speak, write, hear in English, I can use other systems than the metric one also. Just for your info: The USA among some few small countries (Republic of Palau, Liberia, Republic of the Marshall Islands, Federate States of Micronesia, Myanmar) are THE big exception worldwide. They are still refusing the metrification (that means the implementation of the metric system which is an international decimal-based system of measurement). In this context, my kind suggestion/request doesn't seem to be over the top...
