Chewy Peanut Butter Cookies Recipe (About 24+ cookies) Dry ingredients: 7.5oz all purpose flour (about 1 2/3 cups) ** Used 2.5 cups flour once and batter was slightly drier, but cookies still equally good! Hubby prefers more. ** 1 tsp baking soda 1 tsp salt Wet ingredients: 10.5oz brown sugar (about 1.5 cups) 1 cup creamy peanut butter (about 250g) 2 Tbs honey 1 tsp vanilla extract 4 Tbs melted butter 2 eggs 1/2 cup roasted peanuts (chopped) Whisk together dry ingredients. Whisk together wet ingredients. Add dry to wet ingredients. Fold until just combined. Add roasted peanuts. Scoop and roll into ball. Flatten to 2 inch diameter. Bake at 350°F for 10-12 minutes (rotate halfway) Made these and SO good! Best PB cookies. ATKs scientific recipes are good for a reason. Make these! 👍😎🤩

These are now my go-to peanut butter cookie! Chewy and delish! 1) If you don’t have the “Adjust-a-cup”, coat your utensils with cooking spray before measuring the peanut butter and honey. The food will come out easy and cleaner. 2) The dough looks very wet/oily as compared to other cookie doughs. 3) I used a #40 (1.5 TBSP) scoop and baked 10 minutes. Cookies were between 2.5”-3” wide. Perfect! 4) 4:50 why bother rolling the cookies into a ball when you’re just going to turn around and flatten them out? 5) Finally, the bottom of my 1/4 cup measure is almost exactly 2” wide. I just pressed the cookies down with the measuring cup until I saw the edge of the dough around the bottom of the cup. Perfect!

I really loved this recipe. This one will be my new favorite. I tweaked only 2 things. I omitted the chopped nuts and I browned (then cooled) the butter. Insanely delicious!

Omg, I was already loving this video, but then Erin brings out her mom?! Delight overload! When these at-home vids started, nearly two years after the start of the pandemic, and shortly after all the other YT cooks seemed to be heading back to food studios (BATK; Food52, et.), I wondered if ATK had missed the mark. But I *love* seeing my favorite chefs in their own real, normal, non-sexy kitchens. These kitchens (and tools) feel like mine (except I have a very messy kitchen), and it feels like I get to peep inside of their lives a little bit. And as much as I adore Bridget and Julia, it's great meeting other cooks and product reviewers on a regular basis. Keep up the good work; keep inviting ur moms (and dads) over. 15/10: highly recommend ATK channel and recipes.

I am so glad to see a chef crack open each egg, one at a time, in a separate bowl, rather than breaking them open over the mixture that's already been put together. I recently saw a chef with Epicurious break 4 eggs right into a mixture of 2 pounds of ground meats. Had one of those eggs been bad -- and it can happen -- everything, all the meat, would have to be tossed.

I'm glad that more and more channels, like ATK, and embracing the approach of weighing ingredients. There really is no excuse not to weigh ingredients these days. Scales are cheap, it's more accurate, and you don't need to dirty a bunch of cup measurements.

This is how all bulk ingredients should be measured out. This lady does this right. Always portion your dry bulk ingredients by weight not volume. Why? Because brown sugar can lose moisture and flour particles can settle and lose trapped air. Sifted flour has about 25% more air trapped in it compared to settled flour. If your bag of brown sugar is drying out and getting bricked you can revive it with a few drops of water. Let the water permeate the brown sugar overnight. Repeat this the next morning with a few more drops of water if the brown sugar still feels lumpy when you squeeze the bag. Absolutely love those Adjust-A-Cups for measuring wet sticky ingredients.

Great presentation. But what's the part about water? At minute 2:15 you mention water and proceed to make a very coherent presentation about protein water fat. Thank you. But the print recipe says nothing about adding water, and that's also true in the video process of building the recipe. So - do I add water to this recipe to get that nice result? Also thank you for making a recipe that didn't require a heap of special (expensive) equipment.

When Erin adds the two eggs, she said they're going to add water to the dough, not that she would add extra water to the dough. The water's in the egg already. I had to click on the closed captions of the video to read what she said.

I thought the EXACT same thing! I swore she said “… we’re going to add water to the dough which I’ll talk about later.” I heard her explain the effects of water but never saw her actually add it. I spent the last 20 minutes scratching my head and was going to comment until I saw your post and the reply. At 2:12 she actually says “Okay, so now we’re going to add two eggs. THEY’RE going to add water…”. She talks so rapidly, it’s difficult for us old folk to understand. Thanks to you and the reply I’m ready to bake!

I use more butter n brown sugar when adding more peanut butter! Brown sugar is your key ingredient to keep your cookies moist! It works everytime!

Thank you for this! Gmother’s PB cookies were always a hit with my family but I always thought they were way too dry and crumbly, now I know why, I’ll try this today! I do have 1 question, would using a stand mixer in stead of mixing by hand be to harsh?

Me and my kids just made these. I choose carefully if I'm going to use a stand mixer or food processor based on whether the advantage it will give outweighs the extra cleaning effort. I personally had no trouble mixing this by hand

I use my food processor when making any cookie recipe. Just easier as far as I'm concerned! I didn't like the way they come out with my stand mixer! Food processor I'd the way to go! I made 6 different batches of cookies tonite alone. Baking comes tomorrow! It will take days n days for me to have all of them baked off!! They go for gifts along with my homemade pies n cakes!
