That thermometer is amazing if you can get your hands on one. Deep down I truly believe in a few years it will be the gold standard if some of the other players don't up their game.

Love the idea of butterflying the pork. Those Granny Smith apples would be perfect on that pork. I will be trying this out soon. Would peaches work in that stuffing? Looks fantastic.

Yes, peaches would definitely work, but they cook faster than the Granny Smith apples, so cut back on how long you cook them.

I hear ya Keith!!! Just substitute the apple with some spinach guy. The stuffing will still be fantastic! Oh, I know...you could put some roasted peppers in the stuffing for more flavor. And you could wrap the loin with some bacon!!! Now we're talkin'!!!! It was wonderful working with Robin. She has some great recipes on her channel. I appreciate you checking her out. That looks really good! Is there a substitute for apples? They don't agree with me. Would pears work? It snowed again in my part of Canada again. Just a very light dusting. It is in the low 30s, temperature wise. The snow should melt soon. I love Rockin' Robin's channel too. Hope you have a great week.

Hi Dwayne, pears would work great in this recipe. In fact, I almost used pears!! They are equally as sweet and have the same texture as apples, so yes, go for it brother!!! Man, I wish we would get some cooler weather. We set a record high yesterday by hitting 91F in Austin. Crazy weather!!! And yes, it was fantastic working with Rockin' Robin.
