Hi Arnie! Thank you for all the recipes! I love TexMex food more than any other and your videos have made it possible for me to bring it into my own kitchen. I have a question about the Made In brand cookware you use. The instructions say that cooking acidic foods like tomatoes, re-seasoning is necessary. Do you find this to be true? I just received my first set of Made In pans and I'm very anxious to cook your chilaquiles!

Dude, I'm from germany and we have a lot of mexican restasurants, but after seeing a lot of yout videos I noticed they are not very authentic. Your food looks amazing and I'd love eating some REAL mexican food. Greetings from south germany.

I'm from Texas and I couldn't believe how bad the Mexican food was when I lived in the UK. If you can get your hands on the ingredients (which I know probably isn't easy in Germany) it's really not hard to make! And oh god is it worth it.

I'm from America, and I was in Lower Saxony about a year ago and got some nachos at this one place... These "nachos" were more like chips and salsa, and the salsa was basically like ketchup (the tortilla chips had NOTHING on top of them)... I was very disappointed, but some of the other German foods I had when I was there was great :)

Authentic mexican food is very rare in germany, but you can find most of the ingredients, sometimes in specialized stores....its just really hart to find corn tortillas, its all wheat here 😅

I‘m also from the South of Germany and have been in Mexico now for a couple months for a semester abroad - I can tell you our „Mexican“ Restaurants are not even close to the food here😁 It‘s so good That‘s why I need that recipe when I‘m back home

Only way to hold a lot of salsa in a tortilla is to smother tortilla chips/totopos with the salsa and cook it... Plus the other ingredients atop chilaquiles. Yum-yum. A chilaquiles taco is as delicious as the chilaquiles themselves.

I’m a complete novice to Mexican cooking, so I’m grateful I found this channel. I appreciate the step by step instructions and the way this chef describes his way of thinking about food. Even though I’ve got 30 years of home cooking experience, I know I have so much to learn. I’ve focused on Indian, Japanese, and Middle Eastern cuisines in the past, and now I’m looking forward to learning how to make decent Mexican food as well.

How funny, I'm watching this video with my lunch and guess what I made....yep, chilaquiles! Believe it or not, I only had them for the first time last year. Now, they're in regular rotation. I still remember the first bite I took of them. The taste instantly reminded me of my childhood somehow, even though I'd never had them before. I think that's a sign of true 'comfort food'!

I was at a Holiday Inn in Mexico, the breakfast buffet had these, I had no idea wtf they were and left them. THen I found out what they actually are at a restaurant and now I want them all the time for breakfast. Truly comfort food, and nothing extraordinary just delicious

I've always enjoyed eating chilaquiles...whether for breakfast, lunch, or dinner. It's refreshing to view someone that takes the time to explain your technique for making such a simple dish. I'm a firm believer of using quality cookware, Made in is top notch. I love how you showed your subscribers how to toast the chiles, the tomatoes, the cebollas, ajos, and the serranos. @Phayanarë Nope, not to throw dirt at this cook BUT there are literally HUNDREDS of Authentic Mexican videos of cooks/chefs women and men, from/and in Mexico. The variety of cooks go from the very traditional old-fashioned women cooking at an outdoors kitchen to indoor kitchens. From the simplest recipes to the most laborious and complex recipes that can take many ingredients and hrs just for an Authentic Mole or Barbacoa dish.

I’m a novice making TexMex food. I try, I really do, but it comes out more Tex than Mex. Love your videos, my friend. A quick observation, I like the fact that you sometimes make “mistakes” or forget to add stuff. It endears you to me and I’m sure a lot of people watching your videos, makes you more real to us home cooks. The combo grill/smoker/stovetop theme is also great. I lived in Mexico for 3 years. The entire time I was there, I never had chilaquiles with red sauce. It was always green. Never even saw them with red sauce. After I moved back to the states, I had a dream and in the dream someone gave me chilaquiles, but it was with red sauce, and I said, "This is wrong. You can't have red sauce in chilaquiles." But then I remember waking up and thinking, "Actually, they'd be pretty good with red sauce." All your recipes look awesome. Chilaquiles is one of my favorite things in the world for breakfast (and it's pretty darn good for lunch and dinner). The last time I had it was at a restaurant that made it with chicken, and egg, and I think crema agria. I need to just get off my butt an make them. I think about them every now and then. They were so good.
