422g/3 1/4 Cup Plain or all-purpose flour 140g/1 Cup Green (or Black) Olives 360g/1 1/2 Cup Water (room temp) 1 tsp/6g Sea Salt 1 packet or 6g (1tsp) dried active yeast 1 1/2 tbsp/20g fresh Rosemary free Poppy seeds/Sesame seeds/Flaxseed for dusting (optional) Add the yeast to the water and let sit for 10 mins before the next step, it should go a bit bubbly and fermented. Pop the flour, olives, rosemary, salt and yeasty water into a large bowl and mix with the back end of a wooden spoon until fully combined. Cover the bowl and pop into the fridge for an overnight rise (recommended if doing ‘no knead’) The dough should have doubled in size (the next day) scrape out onto a floured surface and gently fold over to create a ball. Pop into the baking tin or tins if splitting dough in 2 - lined with parchment paper, leave in tins for about 40mins to an hour in a warm spot. Score the tops with a very sharp knife before baking Preheat the airfryer, BAKE setting 200c/400f for 5 mins. Bake for 30 mins (Cosori 12L oven) flip for a few mins if necessary Bake for 20 mins (Ninja Dual Basket) flip for a few mins if necessary Other Airfryer brands roughly same amount of time, just keep an eye after 15/20mins Leave to cool before slicing, perfect accompaniment for soup or drizzled with olive oil

this recipe has a hydration rate of 85% far to high . cut the water to 262g/ml (62% Hy), it will give a better rise and not so wet but as long as it taste nice and your happy with the end result. thanks for this recipe

Kerry your bread looked lovely. But it’s your shaping that you need to perfect, as you need a tight top to be able to score properly. John kirkwood is very good, but Bake with Jack is the one I have learnt so much from as far as bread goes. I have not bought a supermarket loaf in the last 10yrs , homemade is so much better for you no preservatives and you have control over salt and sugar in your loaf keep up the lovely videos love plot 25+1 as well . Hello Kerry hope I'm not being cheeky 😃 a tip, if you have a microwave you can turn it into a place to rise bread dough, put a glass of water in the micro and heat it then put your bread dough covered in its baking pan with th3 glass of water left in too, close ya door and leave it to do its magic, it's the warm steam that the yeast loves. Iv3 got a proofing thingy on my airfryer now but it always worked for me. It's not my idea, got it from another y tuber. 😃👍🏼👍🏼 but ya bread looked rustic and very tasty.

One of my favourite cookbooks is by Dan Lepard who makes lots of no knead bread. Not tried it in an airfryer though, only a regular bread in a 15 in 1. Thank you, will give this a try! I keep a Stanley knife in the kitchen for scoring bread or pork crackling by the way.

As someone else has suggested use scissors to score the top of your bread, also to put more tension in your bread once in a ball, place the bread away from you and put your hands at the back of it, and gentle slide it towards you do this several times in rotation and the top will be tighter together.

Hi Kerry. I make this bread as well. Slashing the bread with a knife was a problem for me as well, saw a tip on Utube that solved it. Instead of using a knife, a few snips with a pair of scissors gives e good clean cut.

Kerry, your bread looks gorgeous. I love olive bread and used to treat myself to a small baton loaf on the way home after doing night shifts when I lived in London. Since moving to Northern Ireland 9 years ago, I haven’t found an olive loaf I like, so will have to make your recipe. Thank you. I used a Stanley knife bought and kept specifically for scoring dough, one gets a much “cleaner“ cut with the very sharp blade. Hope this is useful to you.

How did you manage to include all of those olives in your costing? Also, when I roll pastry or kneed dough, I use a sheet of baking paper on the work surface, it means that the cleaning is easy and you can still use the baking paper as you do. Love your ideas. Thanks.

Kerry well done as those loaves look delicious! welcome to the world of no knead bread making! I think you can easily improve by buttering your tins rather than parchment liners and also scoring I find better using scissors and cutting across the the tops, you can go around in circles which also makes a nice pattern. When you do your shaping try to roll a bit more tension into the ball of dough, I think this will give you a better rise and more consistent shape. But you aint done bad. Kerry,perfect timing for .me having taken delivey today of the cosori 12l airfryer oven.I follow Emma's goodies on KZbin for my bread. I have a small pullman lost tin to use in my ninja 100. The pullman tin has a lid so creates a square sandwich shape but also stops the top catching.

Hi Kerry. Regarding cutting the top of your bread, have you tried snipping with a pair of scissors? You could make a nice pattern and would be easier than using a knife. Give it a go.

I have an issue with going with such a high temp, because the bottom doesn't get done. I usually go to 330F for 35 min for a regular loaf.

I am going to make bread in the morning with my reduced hovis granary flour. I got a silicone loaf mould from temu, so I'm going to try it and see how I get on. WOW, that's a fantastic price when you break the costs down, especially considering how much it would be to purchase something similar. Love olives, will have to try this. I have a manual air fryer and love it but was thinking of getting a dual drawer digital one. Can you turn down all the beeping or even switch it off I dont think I could stand it

You can turn off the beeps on the cosori dual basket Jennifer, but not the ninja dual one. Quite a handy feature because you're not alone in finding it annoying, plenty of others do too. I find it serves no purpose as I'm always nearby to know what's going on and do not need a high pitched beep to tell me its finished cooking 😄👍💕
