"Purity" japanese sweet ingredients (15 servings) kingyoku kan (outer layer) -Agar powder 6g -japanese fine sugar 400g -water 275 ml -corn syrup 50ml -lime juice 25ml kingyoku kan (inner layer) -Agar powder 4g -japanese fine sugar 300g -water 180ml -lemon juice 125g bean paste (fillings) -white bean paste 300g -shiratamoko (sweet rice flour) 2-3g -water (some) notes -bean paste filling can be substituted with lemon filling from the hydrangea sweets video -instead of agar powder, you can use agar sticks with 1.1x the weight -there will be excess inner layer kingyoku left from the amount listed, you can cut the amount by half if you want to reduce ingredients used -you can optionally add grated lemon peel into the bean paste process 1. boil agar until completely melted 2. add in japanese fine sugar until it is completely melted as well, then add in corn syrup and lemon juice. mix well. 3. pour the mixture through a sieve, let it sit 4. add water in parts into the sweet rice flour, mix until there are no lumps 5. cook the sweet rice flour mixture in low heat, then add in the bean paste while cooking until it doesnt stick to your hand 6. cut the inner layer of kingyoku into rectangles, and cut the outer layer thinly with a wavy patterned knife 7. fold in 15 grams of the bean paste into the inner layer of kingyoku, knead into a cylinder shape 8. fold the outer layer over the inner layer, add gold flakes as a decoration

@@jk9523 they are interchangeable I believe, but yes caster sugar would be right as well! Because the direct translation is fine sugar, but caster sugar is what shows up in google so I think it’s ok for both XD
