Next video, let's have them correctly make steak: 1. Use high temp oil, not butter (unless basting) like avocado oil, the burnt butter gives a bad taste (and kinda color) to meat. 2. Salt (slightly if wagyu), fresh grounded pepper (fine grains, thick burns) and maybe garlic powder. 3. VERY hot pan, don't poke holes in the meat, let it develop a crust before flipping. 4. Let it rest 3-4 mins so juices don't get out when cutting.

That is medium rare. I don't think you actually know the difference. Medium well only has a small hint of pink in the middle, but is almost all brown. Medium rare has a decent amount of pink in the middle, which is exactly what was shown. Which means what you think is medium rare, is probably actually just rare with a sear.

Tips for ribeye. Dont add butter in the start. Heat the pan, place it in the pan with the thick fat on the side down, slide that around and use that to grease the pan, leave the butter until near the end, add parsley or w.e with it. Melt the butter, and baste the steak with butter in the last minute or two.

Cook steaks in oil because butter will be burnt by the time the steak is actually ready. Butter works for asmon's steak because it is thin and cooks quick

start your steaks in oil. add butter later, by the time the steak is cooked the butter is burned. Cooking steak is easy, even thick steaks. 3 minutes a side for every inch of thickness. Lower temperature, add butter, 2 more minutes per side or less if you like it a bit rare.

Or use clarified butter for searing since it has a higher smoke point. Regular butter has a low smoke point temp in the 200s.

I always just a bit of oil since the butter burns to fast. A mix of oil and butter would give better results :). Sauce is normally added when the steak is practically done. Remove steak from the pan, then make the sauce then if needed add the steak back in.

Here's the easymode secret: salt and pepper both sides, high heat quick sear both sides, put your skillet in the oven on broil for 8-10 min depending on thickness take it out let it cool down and done.

You already failed by seasoning it with salt. Only add salt after cooking your meat, be it steak or whatever. Salt makes it leathery because it dehydrates.

Best steak you'll ever have. Salt dry brine for 1 hour while tempering on a cooling rack. Season both sides with pepper, coriander, and smoked paprika. Sear each side for 30 seconds. Put back onto cooling rack. Finish in oven at 225F until internal temp hits 135F medium rare. 145F internal if you prefer medium. Take it out and drip 1tbsp of butter to top it off. Let it rest for 5 mins. Enjoy.

You don't put butter into the cast iron skillet in the beginning. You put the steak without butter in the skillet and only add the butter near the end. Otherwise the butter will burn until the steak is done since you have to cook with high heat to get the nice flavours.

I am a professional cook of over 15 years and I have to say stabbing your steak with a fork doesn't have it more tender it only breaks the fibers and causes it juices to not stay in.

@annosBurny no it actually hasn't. Where the hell are you getting this misinformation? What I said is a proven fact that all you are doing is puncturing the cell membrane and releasing liquid. The best way to accomplish that is to beat it with a rounded mallet. It loosens the membrane without breaking it, but thanks for letting everyone know you have no idea what you are talking about.

Basting definitely makes a difference, but I think a lot of people are shy when how much rosemary and garlic to use and yeah people do it too soon if you cook butter, the temperature has to be lower and you’re not gonna get a good crust. It’s wait till the crust is there, and it just sticks to it for whatever reason.

Fun Fact: Older cows are sold for cheaper with lower quailty meat overall, but the most flavor by far. Younger cows are sold for higher prices because they have better looking tender meat. Its basically tender vs flavorful. Ofc the best would be a fillet from and older cow that is perfectly tender with a ton of flavor.

Cook in oil and add butter like 3/4 the way through, butter is high in fat which burns before a thick steak is cooked leading to a burnt outside and raw centre

Make sure your cast iron is really hot. Pat the meat down. Season with salt and pepper. Wait till it's scalding hot. Drop it onto the cast iron. 4-5 mins each side depending on thickness. Let rest for 5 minutes. Then cut into it.

Also you have to give the salt at least a half an hour or two perform osmosis and pull the moisture out of the steak and then let the moisture set back in

should cook in high smoke point oil for the sear, before you add the butter. Adding the butter from the start just burns it by the time the steak is done. Other than that you can do the poke test for firmness or just use a thermometer :D
