thanks! I didn't have white sugar so I used coconut sugar, and it worked great. I didn't realize how much smoke it would make (we don't have a kitchen fan!), so I had to take it outside to finish stirring. Since the pot was still hot, the caramel continued to burn for a bit even off the heat of the stove. The smell reminds me of burnt marshmallows over the camp fire :)

Once it start to smoke you can remove the pot n stir a bit..and turn the fire down lower and the smoke will go

Thank you so much for this recipe. I will try it soon. Believe it or not, this will be the perfect substitute for something very similar in Danish cooking. In Danish it's called "Kulør" and I have never seen it for sale in Canada.

In some cases the molasses work. The browning is more so great for savory dish and the molasses is great for sweets although both can be use at the same time for instance to make bbq sauce.

Water should be boiling hot as sudden change in extremr temperature will crystalise the sugar so make sure the water is boiling hot

From what i read, up yo six months. I only make a little at a time. I use a 1/4 cup of sugar at a time. For thr water i use an 1/8 cup of water. (I use brown sugar)
