It felt like two old friends getting together to cook, and hang out. And each of them were trying to boost each other up, and appreciate the other's talents and ideas. It's refreshing to see people trying to build each other up, and show the mutual love for good food and fun conversation. I also like how they both asked each other questions that they thought that us in the audience would ask!

I love how Sadia was so considerate about the wine, I and my family don’t drink alcohol therefor I was already thinking of a substitute for the wine. Whether to use vinegar instead or plain water. Love you Sadia, my family don’t like alcohol either.

Anyone wondering about the alcohol: some people don't consume alcohol because of allergies, religious reasons, don't want to open a whole bottle just for cooking (my main reason) or because they react very strongly to small amounts (like some Asians who lack the gene to properly process alcohol). Its totally valid to omit it as *it doesn't cook off completely unless you simmer it for a long time (+1hr)*. For anyone wondering what to substitute: I would use a tablespoon of red or white wine vinegar filled up with water to reach the necessary amount of liquid. Another good substitute would be a dried tomato pureed with water beforehand. You're basically looking for something that is acidic, umami and astringent, which both vinegar and dried tomatoes are.

Thanks!! I never drink alcohol and one time, when I was pregnant.. I ate a risotto prepared with white wine. Right away I noticed that tingling feeling in my legs of when I would drink some sips of alcohol.. sooo, there is definitely alcohol in a dish after cooking.. that night I took a sandwich instead

Just discovered Pick Up Limes. ( My husband's trying to turn me on to You Tube) Saw the plant propagation video first and I was hooked. I have now been a vegan for 5 days. The first real vegan meal I made was Gaz's pasta. Oh My Goodness! So delicious. I'm shopping for the lettuce wraps on Saturday. So much needs to be added to pantry going vegan. I'm excited for this new chapter in life.

Woohoo I'm excited for you! Don't be too hard on yourself in the beginning. The time to adjust is different for everyone. Just figure out what's best for you! A couple good docs are always encouraging. Some of my favs are: what the health, forks over knives, cowspiracy, and game changers. King oyster mushrooms are one of my favorites! To make a super easy, delicious Chinese vegan dish, just stir fry them with sliced bean curd (also known as dry tofu) with some LEE KUM KEE Garlic Black Bean Sauce. Less than 15min for sure and so so yummy.

Just made the pasta, kale and mushroom dish. It was AWESOME!! I used oatley Greek yoghurt for the cream element and it worked amazingly. My husband was very quiet as he ate but I could see his eyes rolling around and he kept making groany whimpering sounds. Then I’m afraid to say ..... he licked his bowl. A fab recipe. Really lovely. I found Sadia’s channel by chance, a few months after she first started uploading and I’ve always LOVED her. She’s so sweet and very informative (as well as a skilled chef like Gaz). Gaz, I found from some snazzy looking thumbnail in my recommended feed. I used to flood their comments section on my other gmail account about them doing a collab and their first one made me ecstatic but a second one?? I feel so spoiled. IMHO, they’re the best vegan youtubers. Love how Gaz is so relaxed and laid back in the kitchen and it’s so cute to see Sadia acting like a little student watching him cook with ingredients she’s never used before. It was almost like seeing a child getting introduced into cooking because of how innocent and childlike it was. Hope you guys had fun filming and will do more collabs in the future. Have to give that pasta a try. 😋

OMG, SO GOOD! Cooked the mushroom pasta last night fir dinner and it was so good. Char grilling the mushrooms made all the difference (I used portobello mushrooms (large flat)). Hubby and I are new to whole food plant based (5months) & his comment was ‘Definitely, remember that one’. Trying your recipe tonight Sadia.. @@Jdjustsaying the start is sometimes complicated not to get your culture infected by other fungi or bacteria. There are some good websites and KZbin tutorials on it. Easiest to grow are oyster mushrooms in my opinion.

I think Gaz's sense of humourous self-deprecation married to his real faith in his abilities and utterly spontaneous and creative approach to life; yes indeed. I love watching my two fave KZbinrs cooking together! I am totally going to make this pasta dish, as I get mushrooms delivered biweekly here in Philadelphia from an urban mushroom farm and they often have King Oyster mushrooms. And Sadia, THANK YOU for inquiring about what to sub if someone doesn't want wine for the pasta! As a person in recovery, the "cooking off of the alcohol" is only partially based in fact and can be activating for people who cannot use alcohol.

I made this pasta from produce from my local farmer's market in Salt Lake City, UT. It was delightful and satisfying! I had to use regular kale and lemon juice over zest. Curly kale worked great too, I will try zest next time over juice. I used Duckhorn Decoy Chardonnay in the pasta and served with meal too.

To anyone actually worried about alcohol being left over in food after adding it to the dish during cooking (whether it be wine, cognac or something else), please know that left over alcohol WILL be present. If you're worried about the effects of alcohol from eating a dish containing an alcoholic beverage, don't be. Enough of it evaporates (and not enough is added) for you to not be worried. You will not have any measurable blood alcohol level. If you're not drinking alcohol due to religious beliefs or the like, be advised SOME alcohol is leftover.
