麵包105克×12個
高筋麵粉600克 (5杯)
藍莓260克 (2杯)
牛奶200克 (1杯)
雞蛋2個(帶殼60克/個)
糖60克 (4大勺)
即發酵母8克 (2小勺)
鹽6克 (1小勺)
無鹽黃油60克 (4大勺)
烘烤:
預熱烤箱15分鐘後
180°C
20分鐘
Recipe:
Bread:105g×12
Bread flour 600g (5cup)
Blueberries 260g (2 cup)
Milk 200g(1cup)
Egg ×2(with shell 60g per egg)
Sugar 60g (4tbsp)
Instant yeast 8g (2tsp)
Salt 6g (1tsp)
Unsalted butter 60g ((4 tbsp)
Preheat oven 15 minutes
180°C
20 minutes

Olá, você pode usar mirtilos congelados, coloque-os fora da geladeira e deixe a temperatura subir um pouco antes de usar para não afetar a fermentação 🥰🥰❤️❤️🌻🌻

Hello, it’s not suggested to use dried fruit as there is no liquid inside🥰🥰but frozen blueberries is okay as long as you put them in the room temperature to raise the temperature up a bit so it won’t affect the fermentation 🌹🌹💐💐❤️❤️

Hi, you totally can! But for frozen blueberries, you can put them in room temperature and let the temperature goes back a bit, because the totally frozen blueberries may effect the fermentation 🥰🥰❤️👍👍

您好,冰箱里冷藏的牛奶最好复温到室温,或者微波炉叮30秒左右,温度手摸上去温的不会冰就可以(大约30多度,不要超过40摄氏度)

您好,如果覆盆子裡面的籽您可以接受的話完全可以的🥰🥰❤️❤️不過冷凍的水果建議先復溫一下再放入,因為完全冷凍的水果會影響發酵

不建议用冷冻的,冷冻莓类用起来会很水,很烂糊,口感不好,我做玛芬的时候都已经领教过了。

Hi, you can use both🥰🥰 but for frozen blueberries, you need to put them out of the freezer in advance to let the temperature raise back, so it won’t affect the fermentation ❤️❤️💐🌹🌹

您好,感謝您的厚愛🥰🥰麵包發酵和溫度與酵母活性有關,視頻給出的時間只是個參考。如果是溫度問題(比如溫度低了)可以適當增加發酵的時間,而酵母建議冷凍保存以保持活性,因為酵母的活性在非冷凍狀態下會快速降低,開封一個月以後就活性不行了👍👍🥰🥰

@@aliskitchen 請問老師用的是Fleischmann’s instant Yeast嗎?我看包裝後面寫說要先將液體加熱至20°-130°F,再加入酵母,但是老師的影片裡沒有提到要加熱,不知道這個步驟有沒有必要?

您好,是这个牌子的👍👍如果是夏天的常溫牛奶大概是30-35°C(和手溫度差不多),這樣多就不用加熱了,如果牛奶是冰箱里直接取出來,建議加熱到和手溫度差不多(不用過熱),這樣就可以直接用了🥰🥰❤️❤️💐💐

我後來發現牛奶或水不要一次倒完,慢慢揉麵再添加比較能發起來! 我是買罐裝酵母,已經好幾個月😅都放在廚房櫃子裡….不過快用完了,我還不知道這個開封效力減弱!下次還是買小包裝好了!情人節要到了請問老師有什麼情人節烘培嗎感謝🙏

您好,都可以用的👍👍如果是冰凍藍莓的話建議先把藍莓先復溫再加入,因為沒有復溫的冰藍莓可能會影響發酵🥰🥰
