I used to make this after I saved up a whole bunch of chicken fat and cook the rice with it with a pandan leaf, rice heaven! I didn't need the chicken it's just the rice, it was so delicious, so many people were horrified about eating chicken fat so I didn't tell people how it was made, but it's not much different from the Jewish cooking where you use a lot of chicken fat, schmaltz! You brought back a lot of memories for me, thank you Rik!

Doesn’t get anymore authentic than this. Here in Malaysia we call it hainanese (pronounced hi-na-nees) chicken rice. You’re a champion. Respect!

That’s pretty authentic, nice recipe. I do mine slightly differently. Chicken leg deboned beforehand. Bring the stock to boil and drop in chicken, turn it down to lowest setting and sit for 45 mins Rice wise I make a ginger, garlic, shallots paste, 1:1:1 ratio, fry in chicken fat until it darkens then add to rice to cook But either way there is thousands of different way to make this dish.

Cheers Jimmy - nip over to the curry channel tomorrow I'm just stuffing my mush with a great, possibly one of my all-time favourite curries and some parathas. I have just learned that rice contains arsenic and that is the main reason why it is s9 important to wash it thoroughly before cooking it (the highest concentration of arsenic is in the husk. Well, who knew? 🤔

How do you get the chicken soup that clear? is it just fresh chicken? What if you have to use UK supermarket grade chicken?

The Chicken soup is always clear cooking this way. Here in Thailand, the soup is served up with the meal as a soup. Yes, fresh chicken from the supermarkets will have the same result; cooking this way with the same ingredients is not a problem. Best, Rik
