Dry Sherry: This is one of the closest substitutes for Shaoxing wine. It has a similar flavour profile and can be used in equal amounts in recipes. Mirin: A Japanese sweet rice wine, mirin can work as a substitute. However, it's sweeter than Shaoxing wine, so you may need to adjust the sugar in your recipe accordingly. White Grape Juice and Vinegar: Mix 1 tablespoon of white grape juice with 1 teaspoon of white vinegar to mimic the acidity and sweetness of Shaoxing wine. Rice Vinegar with Sugar: If you don't have wine on hand, you can mix 1 tablespoon of rice vinegar with 1/2 teaspoon of sugar as a non-alcoholic substitute. This will give a similar tangy and slightly sweet flavour. Dry White Wine: You can also use dry white wine, though the flavour won't be as close to Shaoxing wine. Use it in equal amounts as you would Shaoxing wine. Thank you. Best, Rik
