Sweet corn is a breed of corn. stalks don't get very high....about 4-5 ft. tall. It has a very natural sweetness to it which may vary by growing season and weather.

OMG!! There is nothing better than peaches, and cream sweet corn from Iowa. It tastes even better than it sounds. We lived in Iowa for 20 years, bought sweet corn from local farmers, and froze dozens of ears so we could have it year round. There is nothing to compare to it. Nothing. Sam, you had an amazing gift delivered right to you. I hope you all enjoyed the amazingly delicious bounty of the Midwest. Nothing can compare. PS: it's just "husking" the corn. Similar to "boning" a chicken, or "seeding" a chili pepper.

Sam, in México in places where they sell elotes, they make a "crunchy" one, they put mayo and cheess, then they put it on the grill, it insane!!
"Dehusking" is called "shucking". You're shucking corn. And yes, corn grows in corn fields! ;) And... pretty much all corn that most people will buy today to eat is "sweet corn". The stuff in the freezer section even says that on it. That said, not all sweet corn is created equal and what you get is basically just the luck of the draw with the weather, soil, etc for that particular season.

It's called chucking corn. And down here in Texas we leave the husks on while roasting. Great video. 👍😉 Mayo on the corn is best, then sprinkle on some chile powder, and some cilantro. Next time make some fresh corn tortillas and wrap em around the bacon dogs.

Watching this now. Sweetcorn is the type of corn we grow here in Aotearoa (NZ). Another great way to use the BBQ with corn is to soak the ears with their husks on. Do cut part way through both ends, alternate ways. When soaked for an hour or two then put them on the grill. That way they steam mostly. The silk and the husks will burn. When nearly done take the husks off and return for charring if wanted.

Also I made some 16-20 prawns yesterday that my girl was raving about ever since. She said they were the best ones she ever had, and I might concur. The ingredients were simply: butter, garlic, squeezed lemon juice, caper pickling juice, chili powder, few chili flakes, paprika (well and a hint of onion powder and garlic powder too for extra depth). I got the caper liquid idea from Chef John and omg what a magic bonus. It adds just a hint of secret tartness that magnifies everything. That is a secret message for Sam. Sometimes you need an excuse to fry up tons of 16-20 prawns. Don't worry about the ratios, trust your gut.

Sam, when we make straight up corn on the cob, we leave it in the husks and throw them in the microwave. When done and you “shuck” them the silk comes off with the husks. The plus on this is the flavor from the husk and the corn. Boiling removes all the flavor.

Mexican tip for grilling corn: Leave he husks, just pull them down, use them to hold and turn the cobb. Grill close to the edge, or put a strip of tin foil to rest the husk on, this is to avoid husks to catch flame. When ready to serve, cut the husks off.
