This video is a how to video on cooking a rotisserie chicken on a gas grill. Gas grill temp was
between 375-400 degrees. Cook time was approx 1 hr 40 mins
Brine Recipe
1 Gallon Water
3/4 Cup Kosher Salt
3/4 Cup Brown Sugar
1/3 Cup Olive Oil
1/3 Cup Soy Sauce
2 tablespoons of Thyme
2 tablespoons of Oregano
2 Tablespoons of Basil
Brine for at least 4 hours, but over night is preferred.

That was a good video. Great video and sound quality, background music was right where it needed to be. Narration wasn't overpowering or difficult to hear. Speech was paced and articulated. ....it made me want to jump in and taste that bird! I shall share. Great job!

Ok...I just watched and figured out I did everything wrong you can do to a whole chicken on a rotisserie...and now, thanks much to you...i have low self esteem combined with my "chicken cook post traumatic stress disorder". Great job on your method and procedures. I will after much counseling and cuss words at my therapist...try again and do it right! This was an awesome video,God bless.

I tried this and it came out fantastic, great recipe and thanks for posting it. Next, I'm going to try this same brine and rub recipe but this time i'm going to grill the chicken spatchcock style with indirect heat. Bye the way....i subscribed!!!

Bad Beast Barbecue turned out great, best chicken ever. However next time I think I will boil the brine to infuse the flavours a bit more, then cool before adding the chicken. Also I might try olive oil as a binder before applying the rub, I didn’t get a perfect even coverage with my rub, your thoughts? Do you boil your brine?

I like your idea of brining the chicken before cooking. I was wondering about the olive oil being added to the brine. The purpose of a brine is to create an osmotic gradient to drive seasonings and moisture into the meat. My concern with the oil is that it would create an oil barrier impending the that flow of moisture. End product looked great though.

I haven't had a problem with the oil blocking the brining process. However the way we have been doing it on the last few cooks is we leave the oil out because it normally just ends up floating on top the brine. We use the olive oil as a binder for the rub after we rinse and dry the bird once removed from the brine solution. Just a change from the way we once did it....thanks for commenting and watching.

Man, I like your style. I grill a lot and you have given me some good ideas. The only problem I have is with the beer. Whenever I drink beer and cook I screw up the cooking. I have a beer or wo or three, then I start talking too much. That leads to over cooked food. I fix this by drinking after the cooking is done. Keep the videos coming my friend. :)

Hi, this looks incredible. A few questions, does the water in the drip tray affect the temps inside the BBQ? Also, I'm from Australia and doubt I can get that glaze here. Can you give a rough idea of what goes in to it?

Thanks for watching, the pan of water placed in the gas grill was to catch the drippings and prevent flare-ups. in a normal smoker I would say that a pan of water helps create a stable cooking environment, helping to maintain constant temps. On a gas grill it is a little different, since the fire is more consistent than with charcoal. Not sure about what is in Big K's glaze, but you can get close with a combination of brown sugar, butter, some soy sauce an a few herbs and spices. Just hit it all together in a small sauce pan. You will have to determine the amounts based on the flavor you are looking to achieve. Hope this helps.

Before you sprinkled the barbecue rub on the chicken, did you put oil on it or did you leave it dry? I coated mine with olive oil and the spices didn't stick very well when handling to put on the rotisserie rods . We just got our rotisserie oven, so I'm still learning.

I usually put some olive oil on the meat and then add the rub, if you are handling the meat for rotisserie, you will have to touch up the meat once it's on the rod, can't stop the rub from coming off while handling the meat, I just add more, thanks for watching

Put the chicken on the spit, then set it over a large bowl. Slowly turn the spit while brushing on the oil and same with the rub. You won't mess up the rub plus the excess oil and rub drips into bowl so an easier cleanup. I will say that was one beautiful chicken!!

does your grill stays open all the time or did you close the lid time to time while cooking..i have a rostisserie burner on my grill. but i dont have a motor , i guess you can do it by hand.

Thanks for watching. I'm not sure where I bought that rotisserie . About that gas grill rotisserie several years ago . but Amazon has a lot of nice gas grill rotisserie kits you can check out just depends on how wide your gas really is.

Every video I've seen about rotisserie chicken fails to mention temp. and time. How long does it take to cook approx.?

"L", I apologize for that....it has been a long time but I think I went by about 20 to 30 minutes per pound to cook. If I remember we put the cook time in the description area of the video, Cook time was approx 1 hr 40 mins. We were shooting for an internal temp of 175 to 180 degree F. Since we brined the chicken I wasn't too worried about it drying out. Let me know if you have any more questions and thanks for watching.

Not sure, I normally cook to a certain internal temp, so depending on the temp outside and heat source the time can vary

PS: YOU CAN ALSO USE ONE QUART OF ORANGE JUICE & 1-2 QTS OF APPLE JUICE TO MAKE AN EVEN MORE TASTIER BRINE. LET SOAK 1-2 DAYS PRIOR TO BARBECUING.
