Maybe....get a copy of War and Peace to read to those viewers able to stay awake while you wait for those kittys. LOL If you "do" decide to try the cats - cut bait and especially pieces of the bluegill carcass would be a great choice. Also.... throwing the entrails etc of your previous catches will keep those puppies.......errrr I mean kitties... cruising the area for days. CHAPTER 1....

Hi Aaron! I dunno, but for some reason I've never been "into" catfishing. I think it's the sitting and waiting part that doesn't appeal to me. I love casting, and the near constant action of catching bass, bluegill and crappie. Maybe next summer I'll work up a catfish episode. What makes me further hesitate is that if I don't catch one, what will I do for a weekly episode? I'm not going to show myself just sitting and waiting for a bite. No one wants to see that! That's why I stay in my comfort zone. Redfish are awesome! Who wouldn't want to catch a redfish? Maybe someday we'll give you a holler! I hope you return back home from the job soon! Stay safe! Those beautiful bluegills are testimony that a well managed lake pays off.....loved the pepper and onion dish...we actually do about the same but add a cup of brown rice....so good...you have us using the ground or crushed pork rinds instead of flour or cornmeal too....I see the leaves are beginning to change around your homestead.....The Coneheads....too funny.....so nice to know each week I will be able to enjoy your wonderful videos....Sitting at the table here looking out on the mountain peaks as they begin to turn white with snow....some flurries here up on our little mini mountain but none expecting to accumulate...hope you guys have a great week...

Looks like Autumn time for sure. That was a surprise catching the cat fish,,, to bad he got away. Chris just got back from Kentucky (work trip) he had cat fish and loved it. Oh how I love peppers and onions. They make the whole house smell so good. I like using the pork rinds and flax meal as well,,, it makes a great breading on chicken too. Hugs to you both. Hi Brenda! Coincidentally, that same catfish will make a reappearance in a couple of weeks, so all was not lost! You already know about the peppers and onions. The longer they're sautéed the sweeter and more intense becomes the flavor! And, you already know that ground pork rinds and flax seed meal give a wonderful crunch! John, there's so much good to say about this 5-star show! That colorful background in your opening/closing screen was mesmerizing - very pretty. I don't know how many cameras you have running - or maybe you're under surveillance (ha, ha) but nice job with all the different perspectives and the blending/editing thereof. The slightly stained color of Lake K's water is ideal and the fall colors of the surrounding trees and bushes was beautiful! Wow, I really enjoyed the beauty and size of those monster bluegills! Ha, ha, kitty kitty kitty! They are actually pretty easy to prepare since you skin them and then just cut the fillets off. But, like you, I'd rather not mess with them. Before I forget, what kind of filet knife do you use? It looks like it is sharp enough to use for surgery! Oh, guess what, Brenda makes her own Remoulade Sauce and we absolutely love it for fried fish! Those French Conehead neighbors are spot on - ha, ha, ha. Those bluegill bites looked like the best mini fish sticks ever! That was a nifty idea to use BBQ pork rinds in the breading mix. The caramelized veggie side looked really good, too, and obviously your Food Critic in Residence agreed. Hi Don! I imagine that nothing beats homemade remoulade sauce. After I published this, I saw dozens of online recipes for making it in-house, and it doesn't seem difficult. I may make it myself one of these days because it's a perfect compliment to fried fish. I hate to see the fall colors end. It's hard to find a lot of beauty after October until spring arrives. Except for a brief scene near the beginning of the show, the outdoor clips are done with one camera, my iPhone, and a good deal of trickery! The bluegill bites were crunchy and delish! The onions and peppers were caramelized until intensely sweet, and about all that was required was a long time in the skillet. I dunno, but I get the feeling that wherever I see the benefits of marriage, Miss Lulu sees the pitfalls! LOL! Here's a funny aside. She and our daughter were in a fast food restaurant earlier today, and some gentleman walked up to her and said, "I think I may know you. Are you Lulu Cheeks?" No has ever recognized me! Oh man that catfish was beautiful! we used to catch them all the time in the gulf but man are they hard to clean so we throw them back. Those fish bites looked devine! The bluegill is native to north America, but to look at some of the colorful specimens, you would think that they are tropical aquarium fish! Yes yes yes juanelo! Amazing how much the fish get colored up in the fall, it's arguably the best time of year to fish! Amazing how many fish nuggets 2 pounds of fish yielded! Also, I honestly think sautéed onions and peppers are one of the worlds greatest gifts! (Esp atop an Italian sausage or a nice hotdog) but as a side dish! Brilliant! Can't hardly beat it! It was very exciting seeing you hook that catfish! A change of pace from your normal quarry. I'm a bit surprised you don't make a habit of eating them, they sure are good eating. Hi Jason up in Maine! It's amazing how gorgeously colored some bluegill are! And if you know where to go, they bite readily in the fall! Oh man, I practically grew up on sausage sandwiches with sautéed peppers and onions! My mouth waters just remembering them! If you stay tuned, you should see that catfish make a reappearance in a couple of weeks. I'm reluctant to keep and fillet the beast though. I know they are great eating. Hello, Mr. Juanelo, I heard you say that when breading the fish, it could take you "half a day" if the bites are too small? A good way to do it, if you do accidentally make the bites too big, might be to take a gallon sized zip lock bag, add air to the bag, put both the fish and the the breading into the bag, and finally shake it up! P.s. which did you like the best, the side dish or the entree? I will have to try the side dish sometime. You are definitely correct, you can never go wrong with peppers, onions, and delicious spices!

Hi Bulldog! I've done the plastic ziplock shake and bake technique at least a dozen times in these videos. I always blow a little air into the bag too, as you suggest. I didn't do it here though because the breading of pork rinds and flax seed meal was rather course and needed to be patted on the fish. Lighter, flour-like breading works best with the plastic bag technique. I can't decide which I enjoyed more. The peppers and onions with balsamic vinegar were awesome! I should make that again soon! Try them, you'll love it! The fish bites were yummo too though! I can't decide! I sure do appreciate your stopping by, and thanks especially for your kind words my friend!

That was a good lesson to keep your line fresh. I bought that Louisiana remoulade sauce (Remulak?) at a Giant Eagle supermarket. It's really tasty, but it's quite easy (as I found out later) to make yourself! It's a very popular sauce in the deep south. You are always so kind! Hi dav! Finally I have evidence of a catfish in the lake! LOL! That's a great question. I think some ponds just have stunted bluegill where there are too many of them. Honestly though, 90% of the bluegill I catch are over 7½ inches. Every now and then there will be a day when small ones bite more frequently, where maybe half are small, but those days are rare. I don't know why this lake is so good for bluegill. I wish it were so good for bass too! LOL! In two weeks, you'll see bluegill even much bigger than in this video. Stay tuned! Hi Stef! This weekend I was bluegill fishing again. Most of the fish were near or OVER 9 inches, handily beating the motherlode! LOL! I thought I was dreaming. I had to pinch myself. All I do week after week, and day after day (when I'm not watching other people's videos, LOL), is Google fish recipes and side dishes! If the pictures look good, and the recipe is simple, I save it! I was watching a show on TV once where the chef (I can't remember who) said not to steam fish because they turn out tasteless. Now I'm afraid to try. What say you? Should I give it a try? It's true! I was under the impression steaming is a very favorable cooking method for fish. There are a number of recipes on you tube. One of the first to pop up was a soy-ginger dish. I could see it being served with a stir-fry of Napa, snap peas, shitake mushrooms and water chestnuts (are they verboten?). Not a very Italian dish, to be sure. Could the fish population in Lake Ketchabigwon be maturing? Perhaps your restraint is bearing fruit, or bluegill in this case. (:

I'll look into steaming fish then! You know much more about cooking than I do! 😊 Your Asian influenced fish dish sounds amazing! I love food from every region of the world. (Although, don't tell Ms. Lulu this, but I think the Irish could do better. LOL!). All the vegetables you mentioned are acceptable on a low carb diet, and you have my mouthwatering just thinking about them! I haven't done a thing to manage the bluegill population (I have tried for bass). Fishing for big bluegill has been great here throughout the 30 years we've had the lake! We're very fortunate!

Hi Frank! The pork rind breading together with the flaxseed meal gave the fish an overall very pleasant crunchiness. And the bluegill bites were seasoned perfectly without adding any additional salt other than what comes in the Old Bay seasoning. Oh yes, now you have me imagining... mmm, deep fry them!!! Oh man, my heart beat faster once I saw that catfish. I confess, I never had one, but I sure was excited to try one vicariously. But that's okay and it was not to be. Those fish bites you made would satisfy me!

Crispy catfish pellets are cool and I'm sure they give you special powers and all but ANY fish that is crispy outside and tender inside is a win in my book. These look to die for! And Peppers and onions are the perfect companion even if Miss LuLu is still a bit sketchy lol I've made up my mind, I'll stay for dinner! We watched you on the big screen. Next we are watching a scary true crime documentary. Have a great night. Great recipe man! Oh yeah adding a few drops of hot sauce and lemon juice in the roumalade is GRRRRRRRREAT!! ;)

Hi Tyler! How've you been buddy? These bluegill bites would fit your criteria! They are indeed crispy, or at least crunchy, outside, and tender and delicious inside! And you can't go wrong with a side of peppers and onions. I never thought to add lemon or hot sauce to the remoulade!! Great idea-er! I must look many times older and uglier on the big screen! We need a new TV desperately! I keep putting it off... I can imagine that your date loves those scare true crime exposes! Frankly I do too! Let's all 3 watch it! You made your accompanying side EXACTLY how I like it!! I am very pickly about how I like my onions and peppers cooked but you NAILED IT!!! PERFECTO!!! And those fish bites, so delectable and crunchy! Question one, you never mentioned in your description where I need go to buy the keyboard drool protectors needed when one watches one of your videos. Those onion and peppers kept getting sweeter and more intensely yummy the longer I sautéed them, but I didn't know for sure what I was doing, I just kinda followed the recipe. You know sum-tin? I actually have a plastic keyboard cover for my laptop! LOL! It works to keep out drool! I know! As to question number two, YES YES YES!!!! You're a precious treasure!!! Hi sweet Sue! You would LOVE these peppers and onions. I can't explain how unbelievably sweet they turned out. But what am I saying? You know what caramelized peppers and onions taste like! DELISH! I know you've cooked them up before. You could put these in a big hoagy roll with the crunchy fish and the remoulade sauce! I never thought of that! I love the idea! Sort of like a po' boy!
