Hey! I'm Alanna - a twenty-something documenting my life as a Canadian living in England.

It's spotted pudding. The term dick is a corruption of the old English spelling puddink. That's all nothing else.

Currants and raisins because fresh fruit is very seasonal but dried fruit lasts for months, sometimes years. Traditional dishes don't require ingredients you need to keep in the freezer.

I think the reason so many of our pudding recipes contain dried fruits is simply that, in years gone by, it was the only way of preserving fruits through the winter. If you're going to make the sort of solid, heavy puddings that fill the stomach in winter you need something to brighten them up. I have a splendid volume: "Miss Tuxford's Cookery for the Middle Classes" (price one shilling) which lists some 60 puddings (but not Spotted Dick) and they're all variants of the same theme using very basic ingredients jazzed up with tinned fruit, jam, bread crusts, orange rind, ground ginger, grated coconut etc. When do you appear on Bake Off?

Brings back memories of my mum's cooking;bread pudding,stuffed ox heart, stuffed marrows and every pork chop had a kidney still attached. All really hearty meals. Keep cooking.

Very enjoyable and well presented. Like a lot of traditional British food, not the most exciting dish but cheap, easy to prepare and filling. And definitely needs plenty of custard!

Looks good and I’m glad you enjoyed it. These recipes, although basic, don’t endure for hundreds of years if they’re bad. Time is the judge and this is an old classic. 🏴󠁧󠁢󠁷󠁬󠁳󠁿🇬🇧🇨🇦.

That was very entertaining! It might be a good idea if you don't know where suet comes from. Traditional butchers sometimes sell it "fresh". There is a vegetarian alternative to suet. Gypsy tart is a dish associated with Kent. Have you thought of making that? The main ingredients are evaporated milk and sugar. Lots of sugar.

The name isn't rude - spotted refers to the fruit that shows and dick is an old word for pudding. Love this with custard or drizzled with golden syrup (although maple syrup would work too)

when I was a kid, I'd get some cheap Tesco chocolate ice cream in a bowl, put the hot spotted dick in the middle and blend them together with a fork. then eat the melted goo.

Can I just say, those steam puddings cook very well in the micro wave and they warm up well in there too, makes them extra fluffy; but your dish was far too shallow and wide for a steam pudding; and they're not normally metal but ceramic.

Yep, usually 1 or 2 pint ceramic bowls, I have Mason & Cash; they work great for Christmas pudding too :-)

Spotted Dick and Jam Roly Poly were my 2 favourite desserts growing up, Had to always be homemade as shop bought were not always great. Then you just pour tons of custard over and enjoy. Now you have made it yourself i can see you making it once a year on a snowy cold morning.

You should make a jam roly poly next especially as you now have suet in as it’s another suet based steamed pud great with lashings of custard! And the was often served as a pudding at school, I actually used to love my school dinners especially in primary school when we had delicious puds like this!

Currents and raisins were ways of preserving fruit for winter. Lots of recipes use them, as that’s what was available when you couldn’t get fresh fruit.

Etymology. "Spotted" is a clear reference to the dried fruit in the pudding (which resemble spots). "Dick" and "dog" were dialectal terms widely used for pudding, from the same etymology as "dough" (i.e., the modern equivalent name would be "spotted pudding"). Suet is the raw, hard fat of beef, lamb or mutton found around the loins and kidneys.

The same with Duff as in Plum Duff. We also have suet around our Kidneys, it is a form of protection for them from blunt or sharp force trauma and low temperatures although one's Doctor gets worried if too much of it as can squeeze them and cause damage. Most Butchers will give it to customers for free if asked and it can be rendered down in a slow oven (120-140℃) to make beef dripping after straining off the fibrous bits.

The "pinch" in the paper should read...pleat, a fold in the middle of the paper/foil. It's there to take the expansion of the Pudding when cooking, but as you used a massive bowl, it didn't matter.

Also called a plum duff, fantastic on a cold winter evening, with custard of course. The ones you buy in a supermarket are usually pretty awful, though the M&S ones aren't too bad.

Alanna, my favorite, it's so nice to see you on Friday! This is a hilarious episode that I sent to my granddaughter who is an excellent baker! She's not yet expecting the level of perfection she will be encountering while watching it. If I may make a suggestion for next time, it's usually so satisfying to watch a cooking show when we see the ingredients dumped into the bowl. I found myself missing that this time. I was thinking "is she just trashing this stuff off camera?" but only for a moment, I know you would never put one over on us viewers! I'm always happy to see that it's time for Alanna's next video!!!

I loved my Mum's recipe: I think home-made is a lot different to the microwaveable pots. No doubt you've already found out, but it's great cold the day after too. I think we used to have it with Golden Syrup instead of custard. And it was wrapped in a tea-towel during the cooking - I have no idea why. Mum always called it "spotted dog" - which kinda makes sense as it does look like a Dalmation.

oh and here a bit of info.. Suet is the raw, hard fat of beef, lamb or mutton found around the loins and kidneys. Suet has a melting point of between 45 °C and 50 °C

The same company does vegetable suet in a green box if you are put off by the beef part. It works just as well.

I mean, of course it's good, otherwise we wouldn't still be eating it 150 years on 😁❤. (Well done for the custard as well, most of these traditional pudding really need custard). You should definitely try treacle pudding and Jam Roly Poly, especially Jam Roly Poly, but always with custard though. 😁👍❤

Suet is anima fat from a certain part of the cow - I think from adjacent to the kidneys? You can also use it mixed with flour to make delicious dumplings to go in a stew, you can't also make suet crust for a meat pie, it is absolutely delicious - one of those traditional UK foods, like Yorkshire pudding, that doesn't sound anything special, but is actually wonderful

Alanna on a Friday, most definitely the best way to start the weekend and cooking strange food too even better. I'm so happy for you that it turned out well and that you like it. Obviously we don't know how well you cook on a daily basis, but you rarely set the house alight, if you ever do have a misshape of a mild fire nature please keep it in the final edit, if you don't have a fire blanket please get one, just to be safe, I would buy one for you and I'm sure that your loyal fans would also be happy to make sure that you are kept safe, I've seen you cooking quite a few times and you are much better than you seem to imagine yourself to be, the dry humour is a bonus too, you always inject humour whenever possible, you are such good entertainment, how did we manage before you arrived on our shores? Take care of you and yours :)

Know the fire brigade was giving away fire blankets pc19. about £13.48 And £12.48 for a powder fire extinguisher or £59.98 for a kit of the above from Tool station.

We used to get all of the traditional puddings at school including the one that I think you have in mind. I have never had jam rolly polly pudding or the one that I think you have in mind since I was at school and would like to eat them again.

Atora is shredded suet. Suet is the fat surrounding the kidney in beef cattle. There is also lamb suet from sheep kidneys but not recommended as a replacement for beef suet as it has a different taste altogether.

I think a some British puds use currents because they are often the more old recipe's from time when fresh fruit was unailable or not in season, a lot of goods would often be dried versions that would store well pre modern age of electrical appliances and fast worldwide transportation.

My prim and proper grandmother called this 'Dotted Richard' but I remember enjoying it when I was younger! Well done Allanna! I'm glad you enjoyed it in the end..... now perhaps you could try suet pastry..... yummy for savoury dishes! 😊

If you don’t like raisins try treacle sponge. It’s basically the same except no raisins but you put treacle in the bowl before the mix and then turn it out when it’s cooked. Both of these my Mum made for us as kids in the 60’s/70’s. Happy childhood memories.

Soundly entertaining stuff! A variation that I and even the kids love, is to almost eliminate the sugar in the mix. For a mix around the same as yours, maybe only 1 to 2 heaped dessert spoons. To serve, drizzle (or drench) with slightly warmed Golden Syrup (Tate and Lyle by far the best) over. Beef suet when rendered and melted with equal quantities of Turpentine and Linseed Oil, makes a very good natural and chemical free waterproofing agent for leather, but don't be surprised if followed by dogs or one's own trying to lick one's boots.

Substitute the currants for fruit of your choice ( Blueberries, chopped Strawberries ) little cinnamon whole new ball game.

10:17 don't feel so bad it looks great, the name isn't rude or considered that way dick derives from the word pudding it wants lots of custard which is the correct way to eat it in my opinion. My grandma made this and its still one of my favourites. Well done for eating something you thought you would hate and loving it, like generations of us :)

You pleat the lid so it has room to expand due to the steam inside when cooking. My mum used to also tie it all up in a piece of cotton from an cut up old sheet so you could lift it in and out of the pot.

For anything involving the use of flour, I would recommend an apron....just sayin'. Having said that, you made a pretty good job of that.

You've made a very good job of it by the looks of things. Well done! Old British puddings use a lot of dried fruit because it's too cold to grow grapes here and imported dried grapes travel better and last longer in the larder.

Two other variations of this classic English pudding are Jam Roly-Poly and Treacle Sponge if you don't like currants that much. Jam Roly-Poly is rolled up like a Swiss Roll with Strawberry Jam inside and steamed in the same way. Treacle Sponge is the basic suet dough mix like you made but before you put it in the steaming bowl you put Golden Syrup in the bottom. The idea is when it's been steamed you turn the whole thing out onto a dish so the Golden Syrup is on the top, although alot of it has cooked into the suet dough mix the rest will run over the pudding. Both of these puddings are much better than Spotted Dick. You should try them now you know you like suet puddings. Steak and Kidney Pudding is kind of made in the same way but you separate one third of the dough for the top and two thirds of the dough for the bottom and roll it out then put the base in the bowl, then fill with uncooked or even cooked steak and kidney mix then roll out the other dough and put it on the top. You have to taste it to believe how good it is... So much better than Steak and Kidney Pie!

In New Zealand we call that a "steamed pudding" and I'm pretty sure we don't use "suet" as I've never heard of it. And yes it has to be served hot with hot custard poured all over it. YUM!
