My story about meeting my Italian boyfriend…. I was playing piano/singing at a living room concert and there he was. I’m Italian so wanted to say yes to a date. On my break I asked him, first 😉what is the Italian pastry (and it’s not a cannoli). He said sfogliatelle. 14 years later, we’re still together 💓❤️💕 can’t wait to try your recipe !!!

I remember my lovely Italian piano teacher. After every lesson, she and her sisters would serve me delicious home made Italian pastries. It was a delight to finish my lesson. (Did you know that Jordan Peterson is part Italian? He’s a treasure to this world.)

I had a sfogliatella for breakfast at a BNB in Napoli. I was in a rush but the owner said 'But you must eat!'. And I'm glad I did. This delicate yet complicated dessert was absolutely wonderful. It was still warm on the inside and the taste of orange was so subtle I thought I was imagining it. I will have to try this at least once. Grazie mille for sharing.

The best sfoghiatella I have eaten was in Cimitile, Napoli, with the filling of tender very fresh ricotta. The outer pastery was exquisite. I lived there for 5 years and I love this neopolitan pastry. Love unites ALL PEOPLE. You are exceptional at making dough. Our compliments.

Mesmerizing visuals! As someone who is married to an Italian as well and have learned the most wonderful recipes, all I can say is that your videos are amazing. And JP in the background is the added bonus we all need. Beautiful 😍 Edit: I make these sfogliatelle as well and I know another way of making them. It takes a shorter time in my opinion. I stretch all the dough at once on a big table with the help of starch which helps make the these layers basically transparent. Then I cut all of the sheet of dough in stripes and butter them and then put them one over the other and then give the pastry the cigar shape. In northern Italy they are filled with the same filling as apple strudel.

I have eaten a sweet something my Italian landlord made and would tell me to come eat whenever she saw me..she was a grandmother living alone and I was only 17.in 1970..very shy ...I miss her to this day...it was very thin with sugar on it..,was so good.. haven't seen it anywhere

What a treat to see these made. I worked in a European bakery in the Hudson Valley in New York for 12 years where sfogliatella, which we also called "clams" were one of our most popular items. Unfortunately, I never saw them made because we received them frozen and only ever baked them! I always wondered how the pastry was created, amazing! Your method of gently stretching the dough at its thinnest does remind me of when our German baker made strudel. He would use the entire long top of the work bench to do his magic. I would only ever attempt this if I had a pastry maker. We used a giant sheeter machine which I got to use in several bakeries over the years, rolling out pie crusts, cookies for cutting, fondant and chocolate. Isn't creating wonderful food for others a joy!? I'm plenty happy with a feast for the eyes. Thank you so much.

I bought this delicious pastry at a bakery/delicatessen in Bergamo last week without knowing what exactly it was. It just looked so delicious - with all the delicate layers & the filling (pistachio). Eating it a little later at my hotel, I thought it was a bit hard (too crunchy) & dry. I can tell by the delicious sound of Guido biting into them that yours were softer & just a bit crunchy on the outside. As he said, "Mmm - they are warm." Nothing beats a pastry fresh out of the oven... Seeing all the work it takes to make this delicacy makes me appreciate it all the more !!

Yes, sfogliatelle have to be eaten immediately. However, I’ve noticed some places in Italy make them a bit dry and it’s all pastry and barely any ricotta filling.

The first time I saw this pastry I wanted to make it, that's been many yrs ago. I searched KZbin with the name and found a video of an Italian bakery, it was fascinating to watch, the gentleman who was making it was quite entertaining.
