Hello.
Ahead of Christmas and the end of the year, this time I made a really, really delicious, creamy strawberry cream cake with a rich milk flavor.
There are a lot of strawberry cake recipes, but this is a recipe that I settled on after a lot of trial and error and contemplation in my own way.
Especially the sponge cake is very soft, moist and really delicious. If you follow the video, you will be able to make moist sponge cake without being crumbly.
I also added mascarpone cheese and condensed milk to make cream with a rich milk flavor.
Strawberry cake also seems to go very well with the creamy milk flavor. 👍

🍓 Strawberry Cream Cake 🍓
▶ Ingredients ◀ 15cm No. 1 Cake
[ sponge cake 15x7cm Round pan ]
3 eggs (about 155g)
75g sugar ( 60ml )
20g honey ( 3tsp )
1 pinch of salt
3 g vanilla extract ( 2/3 tsp )
Soft flour 85g ( 130 ml )
25g milk ( 1Tsp+ 2tsp )
25g oil ( 2Tsp )
[ Cake Syrup ]
50g hot water ( 3Tsp + 1tsp )
25g sugar ( 2Tsp )
340g whipped cream ( 1+ 1/3cup+ 4tsp )
70g Mascarpone Cheese ( 4Tsp + 2tsp )
25g condensed milk ( 1Tsp + 2tsp )
20g sugar ( 1Tsp + 2tsp )

◼ Please be prepared ◼
- Prepare the cake flour by sifting it twice in advance.
- Sponge cake is much tastier if you bake it the day before making the cake and make it after aging at room temperature.
- Mix milk and oil in advance and place them in a hot water bowl to keep them warm.
- Before making the sponge cake, start preheating the oven.
