Tonight's video was very funny, the dad jokes and the kids' sketchy squash was hilarious, Meg you continue to inspire and amaze, as does Ben. Keep up the good work. I hope the kids realize how lucky they are. I am so thankful you have Mini Meg. What a doll.

I think it’s great that y’all have learned to preserve meats like our forefathers did. Peaches look delicious. My tomatoes have done the same as yours. I fought blossom rot and took your advice to add calcium and magnesium, that helped a lot. I had to water every day bc lack of rain, then lots of rain and my tomatoes are split. On the bight side my peppers and cucumbers look great! I had volunteer plants come up that I thought were yellow squash since that’s what I planted last year. Much to my surprise and a lot of my friends I gave the volunteer starts to it was pumpkins. Gardens are just full of surprises!

I've just started to preserve meats in salami's and bresoala. It's really worth learning because it tastes amazing. Homemade and cured salami is just the best. I'm about to taste my bresoala for the first time and it should be amazing too!!

Oh yummmy!!! So many good things to eat in your kitchen!!! I agree with Ben about those peach skins - most unfortunate, but they are NOT nice cooked ... blanching is key to band-aid free cobbler!

Loved this! Buggys apron is perfect. My grandkids each had an apron and wore them whenever we cooked together...which was often. Lots of fun videos to look back on. Keep that sweet girl in the kitchen with you. It is such a special time. 💖

Such a busy kitchen. Meg, where do you find all your energy...I am worn out just watching. Everything looks so good and your lacing on the meat rolls is lovely. You are correct I'm 50 years old and I remember being 5 years old on my grandma's farm in Georgia. She had hams hung in her smoke shed for as long as I can remember the last time I visited her was when I was 25 and that was when she was not doing well and she asked me to go check on her hams in the smoke shed. Yes this is my life story and it's true. We've lost so much information I remember my Grandma bringing a ham in from the smoke shed and she just start slicing off of it I ate it for 20 years never bothered me. It was just the old wooden shack that she hung her hams from because yes we lived on a Hog farm and on the bottom shelves she had all her Jarred jellies and things like that. As a child I was in excellent health never had any problems, ate well. So y'all are doing excellent don't let people tell you you are not ❣️ Thank you for your video today! 🙏

Loving the temp on that compost pile! I’m still adding to mine over the poison ivy, but I have pushed it back and gained some of my property back. That’s partially the point of all that landscape cloth under the melons, so you don’t have to mow, in addition to helping with bugs, etc. But watermelon don’t mind grass, it’s ok to leave mowing until they’re done. No stress mess lol. Little Sister was just totes adorbs with her hair done and her apron on! I love that she wakes up all smiles 😊 I bought some nice cucumbers to pickle with onions and garlic… mmm. So good! Enjoy the rain!

As a Georgia native, you two getting your peaches from South Carolina is sacrilege 😂.Your level of food prep and self sufficiency is truly inspiring. I hope to be on your level one day. Just an idea, roots and refuge mentioned experimenting with breeding one of their old spots with a Mangalitza. Might be a cool experiment for Mo and your female Mangalitza! Maybe you'll have more breeding success and a quicker turn around time? Just an idea :)

I love this channel. I'm 55 and Meg reminds me alot of my late mother and my wife of 32 year, true Moms. Taking care of their family in every way. Your daughter and sons have two great parents . They get to grow up with two good roll models that are showing them what a good mother/wife and mom are and a man/ husband and father should be. Great channel keep it up.

@@marylouise890 She will be 2 in August. I have a great grandson who was born the same day in the morning... she was born later in the day. My great grandson went to be with Jesus when he was 4 weeks minus one day. He was to be 2 in August. So watching Lilliana grow brings a little extra joy and happiness for me personally. Also a reminder for me to keep the Hollar family in prayer. They take a stand for their faith in Christ and that makes them a target for the evil in this world. I would love to be their neighbor and be a help where I can but I live in Ohio so I pray over them. They are all very dear to my heart. 🌻🐛

DO NOT WORRY ABOUT FLIES ON HAM. My grampa gave us a leg of calf that he had started to cure, we took it home and mom kept it in the kitchen for 9 month or so. It was great , like a gigantic pork ham, but kosher....

As amazing as y'all are Buggy is soaking all this up like most kids learn language. Homesteading with her right at your side as young as she is it's going to be so deeply ingrained she is going to be incredible. Did you both grow up this way? That would explain so much. Did your boys start out underfoot as well?

Glad to see that I am not the only one to buy produce in bulk and then struggle to get it processed. Yep, got 50 pounds of peaches coming in next Thursday. My whole weekend will be forfeit... But what a tasty forfeit - jam, pie filling, fruit leather, and almost forgot - pickled peaches. 😍😍

have the folks so worried about flies ever seen an old smoke house dug into the side of a hill. Good gravy my dad should be dead. Flies???? Screened in windows was a luxury. Mammaw had a handheld fan she would wave over the dinner table if things got to bad. Flies unfortunately were pretty much dinner guests. Dad said that he got what was left of the water melon after the flies got it first. Waaaaahahahahahaha Suck it up people. All these old timers who probably gagged a few flies down lived to be a healthy 85. Then something called being old took them home. Ain't no flies there.

1 of those baskets got me 10 quarts. I don’t know the total number of peaches, I would say the basket is probably a good 20-25ish pounds

Have you thought about asking that Fruit Stand Down The Road to save you any bruised or damaged or unsellable produce so you can give them to your pigs and chickens. I pick up produce from our neighborhood Fruit Stand about every other day and I have not fed my 4 pigs, they're Kune Kune so they eat grass, but I have not fed my pigs any commercial feed since april. The savings have been tremendous and I have very happy pigs

Dare to be different! I have admired those hams hanging in your kitchen. My first coppa failed but I didn't give up. The key to my success is smoking cured coppa to internal temp 150F. Works for bacon too. Too humid to hang openly in New Orleans. Keep great Vlogs coming. Very relevant, even the mistakes. LOL

I pressure can most of my meat. About 75% canned and 25% freezer. Even the worst cuts of meat (ie; venison neck) tastes like Mom's roast beef. Canned rabbit this year too.

Doesn't anyone remember on the Walton's when Olivia went to the basement and fixed up a food basket..there was hams hanging..and Meg I bet you could use a crochet needle to help grab the rope and pull it thru...mb not but it would be worth trying

@2:30 I'm surprised you haven't invested in a dedicated dry-ager because of how much you are preserving. With the modular shelving inside you can really maximize the meat stored with the footprint/volume and you can really precisely control the conditions so things finish aging faster.

Someone else has probably already said this, but with a ripe freestone peach, you should *without blanching* be able to cut around it perpendicular to the peach bum, twist the halves apart, pop the pit, and then pinch the skin between your thumb and a knife to pull it off. It doesn't work for every peach, and it wouldn't give you quite the same look of slices (we chunk ours up anyway), but it's less mess, less hassle, and doesn't leave the peaches mushy at the end.

I never comment on You Tube videos, but I saw your video. Please do not throw out your split tomatoes. You can freeze them until you have enough to boil. Boil them and blend them. Then add your seasonings and you will have a delicious BBQ sauce. I live in Florida and the plants suck up the water to survive but the tomato is still good to use. I love your videos. They are inspiring. Thank you.

Sketchy Squash!! I saved some seeds once that I didn't know were half cucumber half sugarbaby watermelon. I guess that was a sketchy melon. It WAS NOT good. You'd think it would have been. But, no. It was not. Yuck!!

RE: AC My dad was born in 1928 and the very first places that had "real AC" were movie theaters! Sometime in the 1920s, theaters in large cities started getting it. By the time Gone With the Wind came out, the theater in Parkersburg, WV had AC. It was either "on" or "off" so it would be FREEZING in the theater LOL. BUT, it was literally the only refuge people had from summer heat. Nobody had AC in their homes then; most people were keeping their food cold with the old style ice boxes with real giant blocks of ice in them. They used a "summer porch" for the kids to sleep on at his childhood home that my great-grandfather built in the 1880s. Anyway, this is probably more than you wanted to know, but AC has been around "almost" 100 years!

South Carolina peaches the BEST! I would know, I live in Johnston, SC, and it's called the Peach Capitol of the World. Video was great and Ms Buggy's hair in a ponytail was precious.

I keep my canning pans up high on a shelf in the kitchen for storage purposes until I need them. I also have some spice jars at about head height (5 foot) and my only concern with the hams would be the grease and dust that settle on stuff at that height in an active kitchen environment. Your going to cut all the outside off anyways though, so that will remove the dust, but as long as you salted it heavily like you said, Im sure its fine. I think it looks neat and Im so happy you guys are doing something unique with the meat preservation for those of us who are interested in learning.

You're in 800 sq ft? Hubby and I are in 990 and we are cramped. I'd give my eye teeth for a bathroom with a walk in tub and a bit wider kitchen. I'm forever banging into my fridge and scratching my cabinets with my walker. With your sons rapidly growing up, do you think you would convert your farm hose to living quarters for them?

My parents and grandparents loved peaches. I remember they would put peach slices in wine and seal em up and store them. The wine you use is one you'd like to drink but I prefer a sangria. Add sugar to the wine to taste before sealing them. When serving take out the peach slices, place in a bowl with a little of the wine from the jar. Top with whipped cream. Oh! Let the jars sit for a minimum of 3 weeks to a month. This is an awesome treat! Yep I'm Italian lol 😊

Missed this video, probably in the chaos that is no rain for us. Yet all the pressure headaches and preserving, harvesting hustle. Rain happens, on radar, above and below us, but just easing right around us. Hairsticks and braid in this one too. :) Now that's the way to live. Have to see if I can jab my dust collecting beautiful hairsticks in and yet still get my hat to stay on. Never occurred to me to try until I saw Meg do it! The straw on ours is too tight a weave for hatpins. I think. That was the idea at least for head protection. We do cut out our tomato splits, but also if possible run outside to bring in anything heavily blushed, right before the skies open up. With good visible warning this is less frantic. They still ripen inside on the counter, without the splits. Also grab any eggplants, or other fruit as well. Wow, that wrapping job looks so cool! I've never made cured meat. How awesome that you all, along with others, are learning this beautiful useful skill, and hosting classes to spread the knowledge. Maybe I can find a follow along online class or something, because that looks so accessible in a nice normal kitchen. Fell out laughing over both the cutest peach snacker, but also again about the bandaid explanation! I've always wondered about the blanching and skins. Guess now I know why it's important. Spaghetti Squash are C. pepo, and the sites I saw listed Cherokee Tan Pumpkin as C. moschata. So can't cross. However, zucchini, and summer squashes are usually C.pepo! I have my rotation list for cucurbits, and still need to consult it every year to make sure it's only one variety per sub-species that I'm planting. For sure it isn't always obvious. Funny that sketchy squash taste potato-ish. Which should still be good enough with the sauce, better treated as suggested though. You may be selling that to a seed company one day if stabilized.

It was interesting to see you tying up a Coppa (sausage) Meg. It looked like you are a professional tyer. It looks very regular and evenly bulged. Nice job! The second one went even better. Wow, lots of peaches! Nice butterflies! Interesting squash you guys. Saved seeds from last year? The peaches are beautiful! Gross, bandaids in your peach cobbler when you don't take the skin off. I hope you enjoyed the squash spaghetti sauce dinner. It's interesting that it tasted a little bit like potatoes. Thanks for this Hollars.

My husband and I watch y'all everyday. Y'all have made me more inspired to do gardening again and I'm excited to get back to it! My husband has been sick and Ben- watching, haha. The past few days he has felt better and better. And y'all got him so motivated to get the brake lines done on our truck, that has been broke down now for 3 weeks. He's a jack of all trades master of none. He's wanting to do homesteading like his mom and sister. He was a farmer on the wrong side and now ready to be on the homesteading side. Last summer he delivered a calf for his mom's homestead. They also watch y'all. I love watching buggy watch and help Meg in the kitchen. She makes me laugh when she starts grabbing something to eat like you guys aren't watching! She just tears my husbands emotions up because he loves his kids just like y'all. I can relate to your spaghetti squash issue; 2 years ago I grew spaghetti squash and they cross pollinated with the gourds I was also growing. Very tough skin and weird taste. Have not grown either since! You guys make my day! Thanks for all your videos. I learn something new every time. Keep well! 🌸🍑🍅

Love the name sketchy squash, lol. I grew banana cantaloupes beside moonlight pumpkins once, and saved seeds from each. Next year, when I'd planted those seeds, idk what happened. Both were inedible! Now I keep my plants that I save seed from on opposite sides of the garden. 🥰Hollar Homestead

We had what we thought were spaghetti squash in our garden this year. They did 'spaghetti up' but tasted like pumpkin. They looked normal on the outside, but when you cut into them, they were very orange like pumpkin. That was the 2nd 'cross breed' item in our garden. The first one was the 'garlion', or was it an 'onlic'? We had a cross between garlic & onion. I have NEVER seen that happen before!!! Worked out great in soups.

You guys are amazing. You do so much. You cook so much and good variety. I’m very impressed. You are truly inspirational. What are your ideas for a very large cucumber harvest. We’ve done cucumber salad, fermented pickles, plan to replenish our pickles and relish. We are sharing with neighbors and the food bank, I may start taking some to work but they are all pickling cukes…. You have other ideas? We may try cucumber chips in the dehydrator

Try marinating strips of it in italian dressing, just like with pumpkin, and grill it on the outdoor grill right on the grill. Nothing beats it! We also do the same with bell peppers & zucchini squashes together but we put foil on the grill (double thick) poke fork size holes (or chop stick) size holes- the flames lick the vegies. We turn them once. You will not believe how good they are- so Very different from any other way of cooking them. Yum! And they shrink a lot so we do lots of them.
