It's crazy cause smiling is literally one of the rules bro. I used to work at Disneyland and you CANNOT break character. You gotta act like you're literally in a magic land. Like if someone's asks when Mickey is gonna take pics with people you gotta make some dumb shit up off the top of your head like "oh he's out walking Pluto he'll be back in front of his house at 2pm :D" you gotta have good posture and ALWAYS smile. It was like a cult man 😂😂 but somehow free admission to the park everyday for yourself plus free tickets for family and friends makes it all worth it 😂

Its fun to do if you have a hot enough oven, low MFG mozza is always a preference, high gluten flour, just knowing the "baker's percent" is key, any one can make good dough if they have a day. Good dough is what seperates the 7's from the 8's and 8's from the 9's, flop or no flop, These pizza makers know a tonne about it, they won't say it and i respect that. Good dough takes around 24 hours to develope flavour, its worth the wait if you're baking it. I like a high hydration dough with most of the air pushed out during prep, dave likes low hydration with a rolling pin used, its all personal preference, also pizza is better than cheeseburgers. Autolyse creats some nice bubbling if you're a pizza maker. Edit***I fold the dough in its container 4 or 5 times, with water on my hands. Adding what is called "crumb" to it, better texture, pizza is a real science. don't ask me about san marzano's. Bread is a science, we all enjoy.

I was curious so I asked Bing Chat how much a regular pizza was at Epcot's Pizzeria, Via Napoli. I was going to guess $27.95 before I looked it up, turns out they run $22 - $28 depending on the season. I nailed the score too. I'm having a good "guesser" day.

I couldn't tell you where in the park but I had pizza at some Disneyland spot just before the pandemic with my best friend and his girlfriend visiting LA, and it was exactly nothing memorable but definitely expensive lol. For context, when the three of us had basically buffet but decent breakfast, as in you're in a line with a million other people but the food is good, the bill was literally around $160ish dollars, and I happily paid for that, lunch, and our dinner because they were so sweet to invite me and being out of town from the Bay Area. Plus I had the money. Then I spent $200 on making a lightsaber I wouldn't ever have done or spent money, but I wanted to vibe with their Disneyland experience, and I desperately looked for a child I could give it but none was literally around. It stays leaning against one of my bedroom corners as a ready weapon against potential burglars.

Autolyse is the key to dave's favourite new haven pizza, also 24 hours leven. Look up what autolyse is, it makes sense.If you use 1gr yeast it has a life cycle, which is short, but it takes much longer than a few hours, thats why good scores get them. If you give the gluten and yeast the time to rise it's done what it will do and you've maximized the flavour.
