I made that drink according to the recipe except for the jasmine/rose-infused Cocchi (which I substituted with Lillet and a dash of rose water), and it turned out great. Its sourness was at the very edge of being too sour, but the liqueur, Lillet, and the syrup kept it all in check. It was perfect with Roku; doesn't work with Beefeater for some reason.

I made the "pineapple sugar" by bringing equal parts of sugar and pineapple juice and 3 pieces of cloves to a simmer for a minute or two, and letting it cool down completely.

@@princepsangelusmors Yeah i made this last night. Pineapple simple syrup works great. The Cocchi he says he infused with jasmin tea and rose petals. That im abit less believing you would be able to taste. Cocchi and Umeshu will overpower jasmin tea and rose oils easily.

Of course not, they are professionals, they would never accept to work on a place like that, they do not do the kind of fast paced bartending that is needed there, instead, they take time to make a cocktail for each customer, building it carefully and serving it gently
