A crumber is used to sweep crumbs off the table in neat and consolidated way in between courses DURING service. Its meant to be used in front of the guest while they’re seated It is not used as scraper ever lol, and to be frank, there shouldn’t ever be anything on the table long enough to cake or require “scraping” anyway. Cleaning of the table between guest happens with a towel (like boh). If a crumbed is being used during hard bus then it shouldn’t also be used in service. Unless you clean that shit well, but a gross association for diners regardless 🙃 Love your improvised use of it as a scooper though. FOH vs BOH life 🤣

Love to see someone washing their hands before working in a kitchen. So gross when someone walks in and just starts cooking and touching kitchen items with unwashed hands.

That steel is for pocket knives! Spend the $20+, and get a longer steel for safer honing. Also, a stone would have been useful in this presentation as well.

It's a diamond steel bro. Those are the better ones. You can use them on your serrated knives.

Because it's unsanitary to touch the handle, that's why he used the paper towel. Those are the rules

you need a SEPARATE sink for handwashing. the paper towel dispenser should be electric and so should the tap, so you don't touch it@@mistershoujo1235

He means Fahrenheit. Not Celsius. Body temperature is 98.6 degrees fahrenheit, so this would be warmer than body temp but not that hot.

Sideburns over obviously cant mise en place his multitasking skills are so bad he cant even dry his hands without remembering to turn off water faucet... it's just common sense and professional to as much as possible dont let faucet run for no reason
