Hi Alex :) You could substitute the almond extract for vanilla extract, leave out the ground almonds and use a fondant to cover the outside instead of the marzipan...it would have a completely different flavour though x

I shall be definitely be trying this because my husband is now gluten free and hasn’t had a battenberg cake for several years and he really misses it. So now I know how I can make one and I can just change the flour to gluten free. Thank you Cheryl xx

Suddenly my local supermarkets have stopped stocking Mr K's Battenbergs so looks like I'm going to have to try this asap. My biggest problem will be stopping myself from pigging out on all the marzipan offcuts - that's the whole point of Battenbergs and I adore marzipan!! Hope mine turns out like yours, Cheryl, it's brilliant!!

I love Battenberg cake. We used to have a M&S in our city, and I could buy them, and lots of other British goodies, there. It closed years ago, and there is absolutely nowhere to get Battenberg anymore. I can get Tunnock Teacakes at the Scottish shop near us, and there's a man, with a fantastic stall at our local farmers market, who sells homemade sausage rolls, meat pies, Scottish pies, and Cornish pasties. There's even a candy store that sells lots of British candies, biscuits, and treats. But no Battenberg to be found anywhere. 😥

That turned our so beautiful and it looked delicious. The color on this could be changed too for a gender reveal party or someone's favorite color for a celebration or to match a wedding color, etc. This looks so fancy. Perfect for a party! From "Eating Royally", Darren McGrady - Of course the Queen was not the only person who liked teatime. Most members of the royal family liked a good afternoon tea. Her Royal Highness the Duchess of York, Sarah Ferguson, loved elaborate afternoon teas. She had an office in Buckingham Palace and regularly held teas for twelve or more. In addition to the regular tea provisions, she would add several more cakes and sausage rolls. She loved Battenburg Cake and I once sent up an absolutely perfect Battenburg Cake that I had made for her tea. It was returned uneaten with instructions not to serve her “store-bought” tea cakes again. A bit of a backhanded compliment I suppose! Oh well, the chefs enjoyed it.

instead of pink and white..........you can do an orange and green for the kids at Halloween (i give them brussel sprouts coated in chocolate - LOL) .........wilton gel colours are the best and if youre ever doing a red velvet then buy sugarflair extra red - its the best on the market........i do sugarcraft as a hobby and will try my hand making anything.

Hello from America. Growing up with my grandparents we had breakfast before school, lunch around noon, and when I came home from school my grandmother and I had tea. Then somewhere around 7 o’clock in the evening we would have dinner. I read that Queen Elizabeth has breakfast at 8 o’clock in the morning, lunch at 12 o’clock noon, tea at 5 o’clock, and dinner at 8 o’clock. This is very similar to the way I grew up however I have watched a number of British television shows and when they refer to tea it sounds to me like they’re referring to their dinner. Can you please help me to understand this?

You have no idea how grateful I am to you for taking the time to explain this to me as it has always been a source of confusion. As an example, in America high tea refers to a sort of fancy, formal, upper class affair. But I read that the original meaning of high tea came from Pub owners Who used tall tables for the minors to stand at when they ate their meal ( tea ) . Whether that is actually true or not I find the explanation extremely amusing. Anyway thank you so much again for taking the time to explain this to me. This turned out so well! I’m very fond of almond flavor. I’d listen to you just to hear your lovely accent. I’m from Texas. Our baking claim to fame is a simple Texas sheet cake. I thought it was only chocolate, but recently found a white version that uses almond extract for flavor. I made a 1/4 version, and was happy with it. When it cools off ( another month) I may try your Battenberg. If I don’t find the marzipan, I’ll frost it with almond cream cheese frosting. Not authentic, but delicious.
