Bavarian Edge is advertised as "The World's Best Knife Sharpener." I enlisted the help of two other KZbinrs to help me put it to the test. Thank you to Richard and Ciara for their help!

A serrated knife is going to saw through anything anyway because of the teeth. Too dull it, you would have to smash the teeth flat or cut them off entirely. Knife sharpening is an art. I know, because I suck at it.

I'm really pleased with this! It works like a charm kzbin.infoUgkxDcr-y2Pf6xdnrFHrSP7dl9kpKaCozcSQ Takes less time than my old electric sharpener because it can take more off the knife faster, and then it smooths out nicely with the finer grit polisher. I don't know how long it will last before the grit wears away, but I wouldn't mind having to replace it every once in a while.

Just buy a set of sharpening stones, or even just one two sided stone, a piece of leather to strop, watch a few videos on how to sharpen and get an edge that'll last longer than what this thing will provide, as long as you have a decent knife, don't use one of these to hone it either.

I wasn't impressed when I first tried my Bavarian Edge, so I re-read the instructions.(Also on the bottom of the sharpener) Low and behold, I was not doing it correctly, just like you on this video. To sharpen, you must put the tip down, the handle up. You are just pulling it horizontally through the sharpener. Try it, it works !!!
@Sorefol
@Sorefol Жыл бұрын
Exactly. Though there might be better options today. But you first go handle up towards you for a few swipes. After that you go handle down towards you for a few swipes. I sharpened a fair share of not inexpensive knives with it (even really cheap ones) and it works on a range of okaish to great. Great being the result for higher end knives.
@mandyheart8754
@mandyheart8754 Жыл бұрын
Also, when the lady tried sharpening her knives and the card, she was swiping through the sharpener really quickly and sloppy. If you’re not going to follow instructions, at least give it a few GOOD solid pulls through. Although James wasn’t doing it correctly, she was doing it even more incorrectly!

Thanks James, Boujee's smile was infectious and I realized I was smirking while watching, and Richard explained it very well. I really wish I could be consistent with the sharpening stone method, but no matter what method I use it seems like I end up with a half sharp knife and a mess of metal dust, maybe I should commit to some of Richard's videos, heh. Seems like the "miracle bavarian edge" was indeed to good to be true.

Thank you for having Richard on. I will subscribe to both. 1 problem I have with those 2 sided honing/sharpeners is they wave the blade when used wrong. After sharpening always check the blade for inconsistencies against a strait surface. Blade should touch at all times it's made to. Two sided honors seem to make holes you can see through.

As a chef, I use different tomatoes for flavor and skin density and the Roma tomato has a more tender skin, making it easier for your card blade to pass (also why they make great sauce/tomato paste). The beefsteak tomato has a tougher flesh, holds up better on a burger or in sandwiches. Personally, any sharping device that comes with plastic moving parts is a no, no in my kitchens!

The idea behind a serrated knife is you don't need to sharpen it. The points between the serrations get dulled to present the deeper points.

If i recall correctly, you're actually supposed to angle the blade when sharpening, i'm half way through the video and I haven't seen it done once. It says in the manual that comes with the sharpener to do that, but i'm assuming that was thrown away.

As a chef the last 8 years, I can easily say no knife is the same. The kitchen I work at uses a 3 stage diamond dust coated sharpener. Put simply there is much more to sharpening a knife than just sliding it through steel. It’s an art form really, traditionally.

I just unpacked a Bavarian Edge. Tried it on 4 of my kitchen knives, different brands and types. In all 4 I had a satisfying immediate result. Couldn‘t find any tomatoes here for the ultimate test, so I did the paper test before and after, as usual. Very fast, very simple, pretty cheap solution. Maybe the difference to the guy on the video was that I took the 5 minutes and a magnifying glass to read the short and simple instructions. There are different techniques to be applied depending on the specific duty. What a waste of time inviting a cooking lady and driving across the town to visit a knife fetishist before reading half of page to use the device properly. There will always be better solution available for professionals, but definitely not for less than 20 bucks. At the end of the day only a small minority loves knives, the rest of the world want‘s to cut something.

I noticed that you apply a substantial amount of pressure against the Scharping carbide steel. The directions state you draw it across with the weight of the knife alone. You don’t push down. In fact, you point the point of the knife downward and draw it back with mo pressure 3 or 4 times, and then you point the point upward draw it down again with the knife’s own weight three or four times and then you open the two and draw it back-and-forth about eight times and it comes out razor sharp. I have a Bavarian knife sharpener and they are unbelievable how sharp they keep it. But the trick is you don’t push down against the two arms that cross you just draw the knife across them. The only time you push down at all is when you’re taking a totally dull knife and want to bring it up then you draw it push down and draw it backward several times and then you follow the procedure of honing it drawing it with its own weight no pressure. I hope this was somewhat helpful.

What that store owner said is not entirely false, but not totally accurate either. It's true a knife edge does bend and flex, which is why you use a knife steel to stand it up straight. However you use the steel because two materials of similar hardness do not wear\scratch each other. The steel will stand the edge up while removing very little material from the blade. However the carbide in the Bavarian Edge is MUCH harder than steel, thus it will abrade the steel. The problem, however, is that it doesn't remove the steel like a proper sharpening stone would by gently sanding away material, it does so by cutting away steel. Much like how it was cutting plastic ribbons from the credit card, this tool does the same to your knives; which is *very* damaging to your knives - as well as inconsistent in sharpening. Think of it this way, when you sand a piece of wood flat you are gently abrading away small amounts of wood until it's flat, this product would be like trying to flatten a piece of wood using a razor blade. It cuts and gouges away material in an inconsistent manner and does horrible damage to the knife. It may seem as though it has sharpened the knife, but it's more damaging than sharpening. If you stick a knife into it with a rolled edge, and don't correct this with a steel first, the twin carbide blades will shear off all the bent knife edges and actually dull the knife and make it uneven; all while removing massive amounts of steel from the knife - just as it did to the credit card. The handheld V sharpeners the guy in the shop held up also works the same way. Solution? Throw these things away IMMEDIATELY, learn to use a kitchen steel properly, and when your knives are actually dull (not just bent and needing to be ran up the kitchen steel that practically no one uses), take them to a *professional* and let them sharpen your knives. Simple as that.

Hey, I saw Vivian Tries do this the other day, do you ever talk to her? I keep hoping I will see you at the As Seen on TV store at the Galleria when I wander in there every few months or so...

I do enjoy her channel sometimes but I don't think we've communicated. Hey I visit that store in the Galleria about once a week so you will probably see me in there someday!

That's interesting. It seems like you can get your knives professionally sharpened, and us that to maintain them between sharpening and extend the time between.

Just buy a inexpensive diamond impregnated hone. Either stick like for a chef or a small block. Bavarian thing nicked my knife edge. Requires the slightest touch to polish blade. Not good for a beginner.

GlobalistEnemy01 True, I actually was talking about the credit card part ,but yeah a good knife even a 60 to 80 dollar one can be very dangerous if not used with carefulness and the right technique. I once cut through my finger nail almost all the way through my whole thumb just by accidentally dropping my Damascus chef knife on my hand.

I dont think having a dull or sharp knife wouldve made a difference on the pineapple i think its more of the velocity and angle of the blade at the moment of impact
