Former bartender here: chuck your limes in the microwave for max 30 seconds then squeeze them! You'll get more juice out! The other trick is to roll them before you try to squeeze them, but we're too lazy for that...

Yes. The kitchen I cook in has a steamer and that is truly the best way to juice them. Just steam them for a few minutes stab them with a knife and put on some heat resistance gloves under the normal gloves and squeeze. But a microwave would definitely work amazingly in a smaller setting. I'm doing that at home from now on

I mean... there are other machines that can extract the juice from things. Juicers. They must have one from all the gadget videos yet he chose a blender. I mean sure, he should just do it by hand but juicer then strained with a cheesecloth would be acceptable in a timed food battle since it takes quite awhile.

Pro tip, you can use a garlic press to squeeze key limes. It's the best and fastest way to get all the juice out of them. And no, Barry, you can't just blend them like that.

Lauryn Baptiste we had family in Florida who would reach out their kitchen to their orange tree, grab orange, maybe wash it, then toss it in a bender as is without removing anything to make juice. My uncle had orange juice ruined for him after drinking it cause it was so good. While most canned orange juice has been through a seriously bizarre process to get its flavor. There are people who eat orange peel when they eat sliced oranges which makes me cringe. I think what someone considered standard really just comes down to what you're used to and as long as its safe to drink there isn't a wrong way when it comes to drinking or eating. For cooking and baking though, as another commenter pointed out, breaking it down in the blender that way adds more fiber and other things that straight up pressing or squeezing the juice out wouldn't.

To me, one mark of a good key lime pie is this: When it arrives at the table, it looks plain and insignificant compared to other pies. Then I taste it and realize less is more, it's plenty satisfying in the amount served.

watching the tasting reaction to Barry and Jamie's pie was weirdly glorious, and so damn satisfying. Ben did some amazing ideas and tributes but, the second that 2nd pie hit their tongue, you could just see the ratatouille moment hit across the room and it was wonderful :)

Barry and Jamie did an amazing job staying true to the roots of the key lime pie. Ben's was so beautiful and creative - but the beauty of key lime pie is its simplicity which allows the key lime to shine!

Have deep family roots from Florida and can confirm. My grandmother would have blessed his heart, smiled, and when he wasn’t looking thrown it away. Then whispered to the ladies poor thing tried. Then look at me, wink, and have a look of ‘what the actual ….’ while nodding in his direction. Southern grandmaw’s are awesome. Memaw would have scowled and been upset thinking someone was playing tricks on her. (My family is brutal y’all. I was only allowed to start bringing food in my mid 20’s and only if grandma tasted and approved first! Otherwise I was simply there to peel, chop, serve, and clean up. 😂)

As a Floridian, it made me so happy to see this challenge crop up. Key Lime Pie and it’s older central Florida cousin, the Sour Orange Pie, are two of my absolute favorite desserts. I would kill to try Ben’s interpretation of the dish, especially if he could get real Florida-grown fruits.

Another Floridian here. Normal’s key lime pie looked like the real deal but the lime blending might have given a bitter note, in spite of 2 cans of condensed milk. Once this pandemic is over, I can’t wait for the guys to come and visit us. Then they can try a key lime pie and compare notes. And of course there’s going to be a video about it, right? Oh, I can also imagine there will be another video about Cuban sandwiches.

I am so happy to see so many Floridian comments on here! I am also a Floridian and I LOVE key lime pie it is amazing! I am so proud of Jamie and Barry for actually making a key lime pie (though Barry honestly deserves to lose a badge for food processing the key limes in my opinion), but I am also glad that Ben enjoyed Florida so much that he actually was celebrating my state (which does not happen with non-Floridian Americans all that often) but no matter what that was not a key lime pie, totally inventive and a cool idea but hands down my vote would go to the normal boys. Come to Florida and enjoy the wonders that we have to offer (normally I hate tourists but because yall are actually respectful and appreciate the food, culture, and beauty that is everywhere yall go, I would be honored to watch all yall explore my beautiful state).

Hey, I wanted to make a suggestion. Recently, Ben has made some videos of basic techniques (I've gone back to the cheese sauce one about 8 times). I'd really appreciate more 'basic skills' videos like knife skills, the mother sauces, etc. I'd also LOVE a basics/kitchen staples cookbook. I tried to find one of your older cookbooks that looked like it might fill that need but I couldn't even get it used. Thanks!!

I don't think Ben's lime dessert is the same thing as a key lime dessert. It feels like if someone had to make a lemon dessert using meyer lemons or yuzu, but used regular lemons instead.

I went through a key lime pie phase a few years back and wanted to make the OG recipe. The one you were given is it. The only improvement to make is to leave your graham cracker crust in different sizes. More like what you get when you put the crackers in a zip top bag and beat them with a rolling pin. The texture really plays well against the creaminess of the custard. Oh, and it would have been slightly beneficial to add two tablespoons of key lime zest too. Though considering the blender method of juice extraction, you probably got enough essential oils for it to have been a wash.

I am egyptian and i've never realised that our lime is hard to find its so avaliable and cheap here.. i will appreciate it more now 😂 .. also i have to say that blending them will make them much bitter than just squeeze the juice

Being a Floridian who lived in Egypt (we are a rare breed I admit) I can attest that Egyptian key lines are almost identical to Floridian key limes! They make a wonderful and refreshing limeade out of them and it’s amazing

I think piped whipped cream with a fancy nozzle into dollops evenly spaced around the top in a circle would have looked better. but, given how little time they had left, I thought it was great! It broke up the plainish top with something interesting. Another option: What if they candied some of the limes and either a. dyed them red or b. candied them in cherry juice somehow? So that there was some color variation in the garnish?

I'd have preferred if they trimmed the crust and grabbed one of Ben's flowers, but it did need the color and height at the middle. I'm actually a fan of the whipped cream all over; it isn't as pretty, but it eats better.

you see, being egyptian, i instantly thought, these look exactly like the ones i use here, fast forward a couple of minutes, they are indeed egyptian key limes (which are generally referred to as green lemon or simply just lemon XD, as they're the most abundant and cheapest)

Ha! I will admit I raised an eyebrow at that. However, I just thought to myself, "Huh, I guess that could work." Not the way it is usually done, but it would save me having to take a bit of whipped cream, then a bit of pie every bite. Edit: If you are talking about presentation, then I get it.
