Have you tried the beets raw? They are phenomenal! The raw flavor is great and would give a different taste to the salad or even on a veggie tray. I love lemon thyme and grow it every year. I will definitely give this recipe a try with the cooked beets and with raw.

Beet salad is so healthy and delicious when you add the right spices, I fell in love with beets as a young child in the Mediterranean, I strongly believe that if you introduce beets and other healthy vegetables to children at a very young age, they will adopt it for the rest of their life, enjoy this recipe, I am going to try it too

Tarragon is my fav and basil...flat leaf parsley I try to use fresh as often as I can and when they dry out I stick them in the freezer and to rehydrate I put the dried herbs in a ramekin and add hot water and stir leave it for an hour and they are perfect..

This would be gorgeous with a seafood platter for an Aussie xmas. I would cook purple beets and grate raw yellow ones.... if we get them here. This dressing would complement the earthiness of the beets. I love this!

Legit just made this with a few changes: 1. Used canned red beets (cuz it's what I had, and the main reason I made this recipe) 2. A little less honey 3. Lemon juice instead of vinegar (I'm lazy and the vinegar was about 3 feet too far away) 4. No almonds, but some crushed cool ranch Doritos 5. Some whole raspberries fell into the salad. Didn't bother taking them out. Still thought it was pretty bomb 👍👍👍👍👍👍👍

I like my veg like I like my men, rugged, tasty and crisp. I try to use raw veg as much as possible in salads or a hot and fierce blanche for root veg. Gives a whole new texture to food and keeps much more of the nutrients.
