It will keep fermenting and become sour like vinegar. But yes you can enjoy it for a couple of days or until it becomes too sour.

difficult to give scientific evidence for most ancient recipes, especially fermented ones. However, you can research or read the book - "the art of fermentation" by sandor katz to understand fermentation. hope this helps.
