Man, this was a life saver. I recently started seeing this girl who loves Benihana, i was a habitchi chef for benihana nearly 7 years ago, and haven't been able to prefect what i could back then. For our 1 month dating anniversary(lame IK), shes been wanting to go for the 3 months we have been seeing each other. I put if off, cause fuck benihana, one of my worst jobs ever(money is very good, very bad management). So i did some practice runs trying to cook stuff up from memory, did spicy fried rice with shrimp (my favorite employee meal) and it was just off. Which is one of her favorites minus the shrimp however i thought she would love that over chicken, so i had to get it right. I make sushi at home along with a lot of other stuff like scallops and steak, so no worries there. But i had to get the rice right since i don't like rice from eating so much of the stuff for years. Following your video(added some parsley and garlic salt[not much] cause i love that shit). Came out 100x better then what i remember making for myself while i worked there. It fucking slayed, hardest part was thinking of an excuse for her not to come over so she wouldn't see i had two giant slabs of rice in my fridge, shes not much of a cook but i would guess seeing rice in my fridge would lead to questions. And it was so worth it, i went with 12 servings as to have leftovers/ give some to the neighbors, but she took more than half for her self, and took the rest to work leaving her coworkers wanting more! And so do i, thanks for the video refresher. I live within walking distance of an asian food market of everything so its so easy to get my hands on various ingredients and experiment if i wish. I also have chickens so, fresh eggs prolly helped but better portioning of ingredients is what slayed the cake. i still hate cooking rice but, Cheers for this video!

Sriracha is made in southern California, not Vietnam or Thailand. Japanese mayo is also made in California, started in Sebastopol.

When I got to tour Hoy Fong's factory, the tour guides went out of their way to make us learn that It's pronounced: "SEE-RAH-CHA". It surprised me because that way is WAY easier than the way I've been saying it most of my life, lol

The Sriracha featured in this video is not made in Thailand. It’s made in Irwindale, CA started by a Vietnamese immigrant. Additionally, jalapeños aren’t grown in Thailand nor in Asia.

I'll put the lettuce wraps and mongolian beef on my 'to research' list! In terms of the topics I'm going to cover, I've worked at Japanese restaurants, Southern restaurants that cooked Cajun/Creole Southern US food. And I had a short stint at a British/American restaurant. I'd really like to do a blend of Asian/Southern foods. Like at the Japanese Izakaya I worked at, we did dishes like kimchi/dashi braised collard greens and shitake crusted chicken fried steak with tofu 'gravy'. Those dishes were super cool. Not sure what restaurants I'll cover in particular, but I have tons of ideas on a list. There are like 1500 ideas so far :/ But I'll definitely look into those other two dishes for you. I'm curious about them, as well!

just a bit. but it's a different type of heat. more linear and not as a creeper type heat that sneaks up on you like the diablo!

You ingredients are spot on, but the amounts are slightly off. Its 2 parts sombal 1 part siracha 1/2 part chili oil Although to be honest I imagine you version tastes very similar as during shortages we add more siracha
