UDON THANI, THAILAND (อุดรธานี) - After a full day of foraging and eating Isan food in a village in Sakhon, Nakhon, we drove directly back to Udon Thani, and had the special opportunity to to eat at Samuay and Sons (ซาหมวย & ซันส์) - one of the most exciting restaurants in Thailand serving innovative Thai Isan food by Chef Num! #UdonThani #ThaiFood #Thailand
One of the things I love most about Chef Num is how he makes use of wild and foraged ingredients - but on top of that - using wild ingredients that come from villages and communities throughout Thailand. As an example, during our meal at Samuay & Sons (ซาหมวย & ซันส์), there was this one ingredient that I believe was a kind of nut. Chef Num explained that it was almost extinct, but in this one village in Northern Thailand, they had it. So Chef Num decided to order some from the village, in an effort to preserve the ingredient. That’s just part of Chef Num’s philosophy and the honesty of the ingredients he uses in his cooking.
Another thing I love so much about the food at Samuay & Sons (ซาหมวย & ซันส์) is the balance of all tastes and flavors - but more on the medicinal side. He has an amazing way of adding layers of fermentation, bitterness, and herbs together that create such a harmony in your mouth.
Most of the dishes were Thai Isan food, but Chef Num explained that his idea being the “journey” tasting menu is that he uses ingredients from all over Thailand - like we had grouper fish (from the ocean), but with an Isan approach and thinking. This is the way that he’s able to innovate and progress Thai Isan food.
The meal was amazing, and a few of my favorite dishes were dried foraged bamboo with yanang leaf sauce, shrimp head butter green papaya salad, and 3 year old pig “moo ping,” - probably the best skewer of moo ping you’ll ever have!!
Samuay and Sons (ซาหมวย & ซันส์) is one of the best restaurants in Udon Thani for a high end culinary experience. Highly recommended, I learned a lot, and loved the flavors.

What makes this 2 part recording so spectacular is learning that Chef Num is not only a genius when it comes to his incredible dishes but that above and beyond everything else he is a SCIENTIST of the earth's productive growth. I love all your recorded travels and restaurants and experiences....they always make me smile. But this one made me cry. It was so moving. THANK YOU.

I'm so lucky living in Udon Thani. Other than their delicious menus, these two brother chefs are so friendly. They can talk about food and ingredients for hours.

Great. Using local food and buying from local farms means there’s more money going back into your community and it is environmentally friendly. The way he cooked and presented it was next level.

In simple words you are doing amazing job even during Pandemic 😷. Lately I started following your KZbin travel and food updates and came across some beautiful 🤩 some wonderful and some amazing and some memorable ones too.. I would like to specially mention that your wife Ying at the background is doing great 👍 job both as a wife and mother.. in one of your old videos you have mentioned that both your parents are Christian missionaries which showcases in your mannerisms and attitude towards people around you.. that humbleness and simplicity is what attracting many.. I've seen a lot of Thai fine dining. Most of them use Thai ingredient to make foreign dish. But this chef, He actually make Thai dish. Even main dish the pork skewer with sticky rice "Kao Neao Moo Ping" is what you can find on any street food area all over Thailand. He so bold to just upgrade the dish with some delicate detail and serve it in fine dining style.

Since I started watching Mark Wiens video's 1 year ago,I never ever stopped🙌🙌I love cooking❤❤🥺I wanna open a restaurant in my country cuz I feel like bringing cuisine from outside to my country is the ultimate!!! Mark we don't have streetfood, we' re missing out. That is what I want here. Watching from South-America - Suriname . How to know Mark’s actual judgement of food: 1. Bite and Lean to the right with eyes closed = Absolutely loves it 2. Bites and eyeballs expanding with no lean = Interesting and tasty but not spectacular ......😆😆

The way of cooking and preparing is very very interesting and I have never seen to grill rolled meat strips like that and is really interesting. Serving and presentation of meals of gorgeous , attractive and just perfect to me.
