I bumped into this YT by chance; I'm feeling lucky. This is the first cooking demo I come across that ACTUALLY DEMONSTRATES AS IT EXPLAINS! No intro blurb that's so annoying when you're in a hurry to know how and what to do... Lady if your other demos are like this, you're my mentor. My thumbs up for this video! I made this yesterday, and WOW, it is awesome! Not only does it taste great, but it looks like the traditional egg version. I hope to live in a world where THIS version is the traditional, and the egg version is the less used! Thank you for sharing this recipe! Love your videos!

500 gm block firm tofu, halved Chop one half (like egg white) Smoosh other half (like egg yolk) 1 t turmeric 1 t garlic powder 1 t onion powder Cook to the sizzle, adding 1/4 water Dressing: 1 can butter beans, incl liquid 1 T dijon mustard 1 lg clove garlic (optional) 2 t fresh lemon juice 1 t black salt (for eggy flavor) Blend to smooth & creamy Add dressing to tofu, about half Add chopped scallions (optional) Add fresh cracked black pepper

OMG I had this at the Vegan Tasting in Charleston WV last month & it is a GAMECHANGER! The VERY 1ST time I haven't spit tofu out !!! If you don't have tofu you can cook a broad, fat, chunky form of pasta (like fusili, rotini, rigatoni, etc.) until it's really soft/soggy and cut it up into small pieces and use it instead of tofu - that's what they do in Germany. This is a fantastic recipe - thank you for sharing! This is one of my go-tos for easy take to work lunch.

Hi Anja. I am a subscriber to your wonderfully innovative recipes on You Tube. Think your fab. And warm wishes from the south of England 😘. I have today made this recipe and it’s really great. When I tasted it however and adjusted it with a little more salt and black peeper I felt there was something just slightly missing.... don’t know if you have it where you are...... Salad Cream! I know it is not an ‘up there’ epicurean condiment but boy a few (or more) tablespoons added and a bit less of your beans mix and I’m in there eating egg mayonnaise! Thanks for amazing recipe. Ps I used Asda dairy free salad cream which you can find in the ‘Free From’ section. X

I just made this alongside the real thing for my husband (who is not quite ready to transition from vegetarian to vegan). I had to taste both versions to make sure the seasoning was right, and I was pleasantly surprised at the degree of similarity. The vegan version would not fool my husband, but it is plenty close enough for me. Thank you very much for this "doppelgänger"!

Yes! It may say Kala Namak on the packet. Kala = black, Namak = salt.

An amazing recipe which I enjoy very often. I think it tastes even better when cold from the fridge :) As I don;t like tumeric, I had a bit of leftover boiled carrot which I pureed and added it to give it the egg colour. Still delicious :) Thanks so much!

this is really different from what i do but i'm going to try it when i get some beans (i'll probably add some chopped celery, parsley and peppers/capsicums but that's what i put in mine). i usually don't precook the tofu and i use veganaise but i'm trying to cut down on added oil so this is worth a try. i tried to post this at pinterest and facebook but the thumbnail picture doesn't show up.

One of the great things with vegan home made recipe i find is that usually you can swap an ingredient for another. So dont hesitate to modify to suit your preferences and go experiment. It's a whole new world of cuisine to discover and with room for your own creativity to explore. :-)

Oe, you gave me some good ideas. This is a whole different way to make egg salad. My mom used to make hers using mayo, mustard and a little celery and pickle relish (of course I substitute everything with the vegan options). This is great. I made the recipe a but only put 1 half clove of garlic and left out the onion powder. I can taste something slightly bitter in the final product but not sure what it is. I did use 2 tablespoons of black salt but not sure if that is what I am tasting.

Hello, this looks good, I like the ideas of mixing two textures. What are Butter Beans, are they "Lima" Beans? Also what can one replace mustard and pepper with...more lemon? or Paprika? Healthful rather than vinegar an irritant to the delicate lining of the stomach and small intestine. Definitely will try it! Thank-you!

+Bish Maya In culinary use there, lima beans and butter beans are distinct, the latter being large and yellow, the former small and green. In areas where both are considered to be lima beans, the green variety may be labelled as "baby" (and less commonly "junior") limas.You can use whichever white beans you like. As for the seasonings, you can adjust it to your own taste. However, the vinegar does give it a great flavor. Vinegar is actually good for you... have a look at www.nutritionfacts.org for lots of great research on this.

+CookingWithPlants Thank-you Anja. I know some teach vinegar is okay. I'm part of the school of which know vinegar is destructive to the stomach lining and delicate lining of the small intestines. So I usually replace vinegar with lemon juice. Same occurs with baking sodas and powder, I use yeast instead. Take care now, oh I bought your Kindle Book! Awesome!

+Alex Lee They're the same type of bean, but butter beans are "mature" (whitish in color) and lima beans are "immature" (green in color). For me, a Floridian, there is a marked difference between the two. I would never call what Anja used "lima beans".

In Australia Lima beans are the white color. So confusing. For the sake of this recipe, any white beans should work :-)

can you slice the tofu and use your butterbean/black salt recipe to make an egg patty for a breakfast sandwich?

Just made this for Sunday brunch, used okara for the crumbly bits, cooked five minutes, then added the chopped tofu. Good with chives too. Very eggy and tasty. Thanks for the recipe! PS, just finished it in lieu of the hardboiled eggs my OH likes with his beetroot ovenbaked chips. Much better than egg!!

hi great recipe ... are the butter beans cooked ?? here in India we do not have canned beans , we soak them overnight , wash cook and use

Hi! Did u drain the tofu? Can i use silken tofu? And what can i use instead of butter beans? We don’t have that in turkey..
