thank God for you . when my 17 year old daughter found out she had a gluten intolerance i was devistated . bread and baked goods are my life my first science experiment was about yeast and bread 😀. i have lived with the idea that gladiator s ate gluten to be big strong and healthy and have made sure i ate this way too . dont get me wrong i understand this is not for every one but its worked for me im 36 and im still the same waight i was when i was 16 115lb . but for my daughter i would love to make her breads still and pies and pastry its sad to watch her turn from my kitchen im not used to that at all my kids are always under my wings will im cooking . so thank you from the bottom of my heart for doing the work on finding the perfect flour .

I made this mix last weekend. It was a kind of daunting task to start out with, due to the quantitie of flours involved. For starters, I did not have a bowl big enough to accommodate 96 oz of anything. I had to sanitize a mop bucket, then dump all the ingredients in. Then came the mixing. Next came the mixing. There was no whisk in my arsenal that could handle the job. I had to plunge my arm, nearly up to the elbow, into the bucket and make my hand into a giant whisk. I did this for around 10 minutes. BTW, make sure you have something large enough to store this stuff in first...I had to cling-film the bucket and secure it with industrial rubber bands. DO NOT LET MY DESCRIPTION PUT YOU OFF, THOUGH. The bread I made out of this stuff was wonderful! It was very nearly like eating a slice of wheat bread again. Way better than any store-bought brand. (Yah, I'm talkin' to you Udi.) No gluten-free bread will ever replace wheat bread, but for God's sake I could bend one of these slices without it crumbling into bits on the counter. And it didn't taste like cardboard. Hallelujah! I only wish someone had warned me of the realities of the basic volumes of this mix before I started. And crunching the numbers wouldn't have helped unless you can eye-ball your standard mixing bowl and say, "Yep, that bowl will fit [blank] ounces." Sadly, it turns out that I could not. Now I have a mop bucket and a flour bucket. *shrugs*

I used your flour mix to make a pizza crust. I'm vegan and I omit oil. I used 2.5 cups of flour, 1/2 cup of gluten free gluten (bought on amazon), 1 packet of yeast in 1 cup warm water, 1 T raw sugar, 1 t salt. The crust turned out perfect and soft. Thanks for the flour recipe!

I had forgotten why I ordered Sweet rice flour until I just reviewed this video. I also found in Walmart Hispanic section, a ric e flour called Tres Estrella in a 1 lb box @ $1.12. Haven't tried it yet, however, at the price, it's a bargain.

Hi, just wondering because I am a new to being a diabetic so if you know could you tell me if gluten is what we have to avoid with this illness. I think it is but not sure. I know as of right now I cant have any pasta or biscuits etc.. which is very hard cause I am a carb kinda gal lol please let me know if you know. gluten is a type of protein found in selected grains such as wheat and wheat by products. There is no concrete rule that says you to avoid gluten because you have diabetes type 2, unless you are intolerant to gluten. It's personal choice to decide to give up gluten based products or not. The key to managing diabetes is making wiser food choices and doing some exercises daily. You should totally seek out professional dietary advice from your local clinic's dietitian or certified holistic nutritionist.

Sonya Rosamond If you are still around -- I am a recent diabetic also. You need to limit carbohydrates and sugars. I am gluten free because I'm gluten intolerant. A good rule of thumb is to use a smaller plate; fill one half with non-starchy vegetables; 1/4 with protein; 1/4 with carbohydrate. A dietitian can help you decide the correct diet for you. My doc told me to eat this way and so does the ADA. Good luck.

Hey i saw you where asking about different flours so tapioca flour is expensive but to make it grind up some tapioca pearls and for the potato flour you just need to mash some boiled Potatoes and dehydrate them and grind it up hope this helps

You can use Arrowroot starch/flour instead of tapioca starch. Tapioca is made From the cassava root, so also do not use cassava flour since you are allergic.

I normally used self rising flour for all my recipes. When switching to GF, and using your recipe for the GF flour mixture... would I have to use baking powder and salt like I would if I used all purpose?

I couldn't find sweet white rice flour at our Natural Grocer, but found sweet sorghum flour. Think this would work as a substitute?

The sweet sorghum flour should work... However, if you are sensitive to gluten, be aware that Sorghum flour has been known to have gluten contaminates in it and several batches were recently recalled. You can also source Sweet Rice Flour from most Asian Markets, Whole Foods, or even online at Amazon. Hope that helps! =) God Bless! ~Erika

Could you please post the ratio of Xanthan gum and Tapiaco starch to flour required to acheive soft risen bread. I am diabetic and cant have rice flour as rice is high GI so I will need to substitute for low GI grains.

What's the difference properties between brown rice, white rice and sweet rice flours? Can I leave one of them out? New to gf. Going gluten-free when you don't ACTUALLY have a gluten intolerance isn't going to do anything for you, as gluten doesn't really do anything good OR bad in people who don't have Celiac. Some people claim there's such a thing as "non-celiac gluten sensitivity," but it's not really all that common, as far as I know, and you'd know if you had it. Don't fall prey to the gluten-free fad that that book is promoting if you don't have to, because all it's going to do is make your life a royal pain in the ass... Sincerely, Someone who actually DOES have Celiac, and wishes so much that she didn't...

+sepifi thank you, but my daughter who had terrible eczema stopped eating wheat, within a week the eczema began to clear and now 2 months later is gone. I also suffer from eczema. I hope it will clear for me. As for my husband he has lost a couple of pounds and doesn't feel as sluggish. he's not heavy, just has about 10 stubborn pounds. I know it's not easy. I love baking! wish me luck.

Ive had eczema since I was a child (actually contributed to life long sleeping issues), my mother is celiac. So its all starting to make sense

Well, I have to tell you that 'non-celiac gluten sensitivity' is definitely a real thing: I have it. I have been trying to eliminate as much wheat from my diet over the past year. When I'm a good boy and eating correctly, I don't have as much stomach distention ('wheat belly'), I'm more alert...but most of all, my joints don't ache. (Fitness is a foundation for me.) But when I fall off the wagon and load up on gluten products...I turn into an old man. Seriously; last Christmas I was travelling and jumped of said wagon for a week. At the end of it, I could hardly get up off the ground, my joints were aching so much. Within a week of deleting all that stuff, I was back to a pain-free existence. So yes, some of us do have a 'sensitivity' and not an intolerance or an allergy. (My mom has something far worse than me; she gets hives and has intestinal issues when she has gluten products.)

A lot of times, Sweet White Rice Flour is called Mochiko and can be found at Asian markets - but I get all of my supplies from Amazon and/or Vitacost - I have links to all of the products including the King Arthur Gluten Free Flour on my website. The poiint of this flour recipe is that it contains no wheat gluten, which is what seitan is made *from* If you *want* to make your own seitan, Google will give you some good results with keywords like "make seitan from flour". There may be other proteins out there that would make an acceptable seitan-like substitute, but I've never been able to get good results with the things I've tried.

Carrollyn Durant I leave mine in an airtight container (like the one shown in the video), but a Mason jar will do just as well. I leave mine out since I go through it quickly, but you can refrigerate it as well. Hope that helps. God Bless! ~Erika

With a lot of gluten free flours I find that it taste grainy and once cooked and eaten, I feel like it dissolves and leaves a grainy texture still. Does this work ok for cakes? Trying to come up with some old fashioned cakes that are gluten free.

Hi; I'm a big baker. I just recently found out a year ago, after years of suffering, that I am severely gluten intolerant. It's progressed so bad that now I can't even touch flour or even bread. I've been trying to find a great flour mixture that will be perfect for baking, and won't change the way my most popular recipes are made to much. I'm pretty sure anything is going to make them taste a little different. But what I was wondering was if there was a way to break this down to use one time before making a large mixture, and how closely it gets to the same texture and taste of foods with normal all purpose flour? Thanks!

I self diagnosed my mother as celiac, switching to gluten free in 6 months she lost about 50 pounds after years of eatingt basically nothing trying to correct her weight issues. How this isnt more understood by people that are having weight issues is beyond me. HUGE problem with the diets in our country

The only way to confirm Celiacs disease is blood testing and an endoscopy ( camera down throat) into the small intestine. If the villi are laying down and not allowing nutrients to absorb into the bloodstream, verifies that the person has Celiac's disease. Been there done that!!! Too many people are convinced that gluten is bad for them. A lot of the gluten free alternatives are hazardous to a persons health!!!!

Can you use this in a pizza crust recipe? Is there a way you could figure out how to do a thicker/self-rising crust pizza? I see PLENTY of gluten free THIN pizza crust, but nothing thick :C is it even possible to do with gluten free flour?

Unfortunately, brown rice flour contains lectin, a form of a gluten protein. Unless the lectins have been removed altogether, it is not healthy for anyone to consume. As an FYI, Asians only cook with white rice as it contains no lectin. Is there another substitute to use?

Hi I have been searching for a good mixture of an All purpose G/F Flour mix, however once again every single one I come across uses Tapioca Flour or like here Sweet Rice flour which I cannot get either of these, and also because of where I live I cannot get it sent via Amazon as we have restrictions on Food items coming in by the post from Amazon, so these are the flours I do have and so I was wondering if anyone out there can help me with maybe rather than failing miserably and having to throw away flour once mixed that I may get someone here to help me with a yes or no for mixing certain flours.I have Sorghum Flour and Millet flour, White Rice Flour, I have ( homemade Garbanzo Flour or Chickpea Flour/Almond Flour and Coconut Flour) I have Cornstarch I also have Xanthan Gum. I am desperate to continue cooking and baking especially Naan Bread and Chapatti as I love cooking Indian food.Please please please any help will be so much appreciated.Thank you.

Tast is rice i dont like it and this mix is not successful with recipes I'm upset I think to add a millt flour in this mix to change the taste

ugh that tapioca I can't handle that texture. It's nothing like regular flour. it makes things so gummy and yuck. I am trying so hard to find someone that has found the closest thing to actual texture of flour

Way too much rice flour for me. Needs some corn flour in that mix. Then it has a much better taste.
