If you are curious about onion types: dunno about Iran, but in Italy yellow onion is used for soffritto and as a base for stews, sauces and stuff like that (turns out your mom was right all along!) White onion can be used for vegetable stews, pickles, soups and it's also excellent when stuffed. Purple onion can be used raw for salads, or in a jam to be served with meat, or even caramelised. Anyway, keep up the good work! I've already tried a couple of Iranian stews and I can't wait to try this one as well!

Highly recommend freshly ground pepper! Also if you wash meat, make sure you blot it WELL with paper towels ! Don’t add wet meat to pot. Makes a world 🌎 of difference!

Tara Jun, first you need to wash the celery very well. There are always soil at the bottom part of celery, then you need to seperate the string likes from each stems then start cooking. Finally you need to let your stew cooks longer with low heat till you see the oil from the ingredients come to the surface . Never boil the stew after you add lemon juice. Thanks anyway.

This is my favorite Persian khorest. I’ve made it with lime juice once, but nothing beats the flavor limu Omani gives it. I like to eat them with my rice too. I use about 6-8. Pierce them and leave them to boil with the meat. I like this lady’s addition of garlic I’ve never done that. Lastly, I’ve always cooked the celery 10 min then put herbs in for 10 more, but I like how Tara only does it a few minutes, I’m going to try that too.

Nice recipe, We add dry lemon in the stew. Sometimes adding lemon juice in hot stew makes it bitter.

sooreta Sooreta when buying olive oil make sure the olives are grown in CA, Italy, or Greece.(bottled in Italy) is telling you it was bought from China, and bottled in Italy

Great video, just 2 things, u should never fry with olive oil as it’s toxic at high temperatures, also celery base is in direct contact with the soil and can contain fertilized dirt and I’ve even found slugs, should be separated and rubbed well with fingers under running water to properly clean :)

Who are you and why would anyone want to please you instead of being their self. I don’t know where you’re from but in the United States we are free to dress and speak however we want and be our true selves. Who says you can’t teach someone how to cook and look good. If you have attention issues that is your own problem and probably something you should work on controlling. By day I cook on u tube . but I migrated to USA long time ago and I went to public school here and live in BH or somewhere similar. I have to act very stuck up and phoney. And try to act like women who castrate their men just to prove something Which is entirly superficial ,which is a turn off! We demand everything from few carat diamond rings to late model Mercedes Benz Etc but we have nothing to offer in return . after few years of good milking (our husband that is) we plan to head for the kill and divorce the rich dude or give him a heart attack and clean house and run away with the boy friend who had been on the side lines all along all these years ...so thats the life of a cute inocent little girl who as a teen once dreamed of a nice husband who isnt a play boy .. And so the life goes on for the persian women who migrate to the good old USA. Which make monsters out of innocent women from all over.. Isn't that wonderful?

bobby interesting “story” you built about me just by my video. Hmmm... well let me tell you how crazy wrong you are. Born AND Raised in Westlake Village, CA... about an hour away from “Beverly Hills”. Was never stuck up... in fact, most of my friends growing up had nothing fancy and neither did I. I graduated HS at the age of 16, moved out and had 3 jobs to support myself and my education. Graduated college, got into real estate and made my OWN money (which was hard earned), bought my own cars, and did everything for myself by myself. Met my husband, in which I do EVERYTHING for and my step boys which I cherish, love and take care of like they are my own, went to culinary school, became a great private personal chef and yes, then I started my KZbin channel because cooking is a passion of mine that I think many people can learn to enjoy and love as much as I do.... That was really fun, showing you how ABSOLUTELY wrong you were. I wish you luck in life... you need help with how you perceive people.
